  • 1 cup semi sweet chocolate, chopped or chips
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare your baking tray
    Preheat the oven to 350°F (175°C). Line one or two baking trays with parchment paper.
  2. Melt the chocolate and butter
    Add the butter and semi sweet chocolate to a heat safe bowl. Warm slowly over a pot of simmering water or in short microwave bursts. Stir until smooth, then set aside to cool for a few minutes.
  3. Whisk the eggs and sugars
    In another bowl, whisk the brown sugar, granulated sugar, eggs, and vanilla until the mixture looks thick and glossy. This step helps give the cookies their crinkle tops and chewy brownie texture.
  4. Combine the chocolate mixture
    Pour the melted chocolate into the egg mixture and whisk until smooth.
  5. Add the dry ingredients
    In a separate bowl, mix the flour, cocoa powder, baking powder, and salt. Add this to the chocolate batter and fold gently until combined. Stir in the chocolate chips or chunks.
