Right now, the season of Winter is upon us, and for me, when there is a chill in the air, I tend to crave comfort foods. When I want some really good comfort food, I usually turn to a potato of some kind. Whether it is french fries or a baked potato with sour cream, butter, and chives, I will treat myself. I decided this time around to cure my Winter blahs, I would treat myself to a heaping scoop or two, to one of my favorite comfort foods–Loaded Red Mashed Potatoes.

Loaded Red Mashed Potatoes

Ingredients

  • 3 pounds 3 red potatoes

  • 1/2 cup 1/2 softened unsalted butter

  • 1 cup 1 sour cream

  • 1/4 cup 1/4 whole milk

  • 1/2 cup 1/2 fresh chopped chives

  • 1 tablespoon 1 garlic powder

  • salt and pepper, to taste

Directions

  • Boil red potatoes in a large pot of salty water until tender, about 20 minutes.
  • Drain and transfer to a bowl. 
  • Use a potato masher or mixer to mix in butter, sour cream, milk, chopped chives, garlic powder, salt and pepper.
  • Serve and Enjoy!

This was the perfect carbohydrate that my body needed.  I paired it with salmon and broccoli and enjoyed every creamy, buttery, and delicious bite of the potatoes. This is a quick recipe to make. It takes very little effort to clean your baby red potatoes and place them in a saucepan of water already brought to a boil. Here’s a tip that I like to use-Try not to get your potatoes too soft. You should be able to do a fork test and once you stick a hole in one or two, the skin will gently be easy to peel back. Then, once the potatoes are ready, drain the water and place your potatoes in a medium bowl. 

I add all of my ingredients while the potatoes are still hot and mix everything in together. I use salt and pepper sparingly.  Only a dash was needed for this recipe. The butter, sour cream, cheese, and chives were just the right balance of creamy deliciousness that I was craving.

These Loaded Red Mashed Potatoes might just give you a little comfort too if the Winter Weather Blahs seem as if they will stick around longer than they should. Get as creative as you wish. I left out the bacon, but feel free to use it as a topping.
