Is anyone in the mood for a quick and healthy breakfast? If so, then I have the perfect recipe for you! How about a Breakfast Omelet? It is easy and quick to make and quite healthy too. I call this a Win Win Vegetarian Breakfast Omelette because you are getting lots of protein and saving yourself loads of time in the kitchen. 

I enjoy making simple recipes because I like to spend time doing other things that I enjoy as well. I love to cook. And along the way, I have managed to preserve my time in the kitchen by making the meals that I make satisfying and healthy.

I have found that quality time spent with family and friends around a good meal can be quite a bonding experience. When the palate is content, conversations flow differently. That is always my goal. Eating makes people happy and the bonus is feeding the ones you love, food that is good for the soul. This Win Win Vegetarian Breakfast Omelette is truly good for your soul and your health.

You already know that eggs are extremely nutritious and yield numerous healthy benefits. Eggs are loaded with protein and that protein contains the amino acids that our bodies need to remain healthy and strong. Eggs also help with your brain functioning and allow your nervous system to work effectively because of the many vitamins and minerals eggs offer. Eggs are quite inexpensive, which can not just preserve your health but also your wallet.

This recipe also contains spinach. I am sure you already know the many benefits of eating spinach. Spinach is thought of as a Superfood and for me, anything that is Super is worth trying.

I usually think of Popeye the Sailor Man and his muscles when I eat spinach and I usually laugh because Popeye had it right years ago. Who wants the strength and speed of Popeye? I know I do! That is why this Win Win Vegetarian Breakfast Omelette will continue to be served at my house.

Ingredients

  • 2 large eggs

  • 2 tablespoons milk

  • ¼ cup red bell pepper, diced

  • ¼ cup chopped spinach

  • Salt and pepper, to taste

  • ⅓ cup cheddar cheese

  • ¼ tablespoon butter for pan

  • Medium sized non stick pan

Directions

  • In a medium sized bowl, crack eggs and beat them together. Stir in milk, diced red bell pepper, chopped spinach, salt and pepper.
  • Next, in a medium sized nonstick skillet, melt butter over medium heat and add egg mixture.
  • Let eggs cook for about 3 minutes. Then, use a rubber spatula to drag the edges into the pan’s center.
  • Once the bottom is firming up, sprinkle on cheese. Then, fold (as pictured).
  • Cook for 1 more minute.
  • Serve plain or with a sauce if your choice (hot sauce is great!) and enjoy!
