To make this recipe you need 1 ½ cups of all-purpose flour, ½ teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, 3 teaspoons of pumpkin pie spice, 1 cup of granulated sugar, ½ cup of vegetable oil, 15 ounces of canned pumpkin, 2 large eggs, and ¼ cup of water. It is best to prepare all of your ingredients so you can make this quickly and pop the muffins into the oven. This recipe also makes a whole loaf, however, it will take 45-60 minutes in the oven at the same temperature.
After preparing the ingredients, preheat your oven to 350°F/177°C. Then, prepare a 12-cup muffin pan with liners or spray. Next, in a large bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. In a separate bowl, combine the sugar, oil, canned pumpkin, eggs, and water. Pour the wet mixture into the flour mixture. Use a rubber spatula to fold everything together.
Pour the batter into cupcake liners or grease a muffin tin. Bake them for 18-22 minutes, or until a toothpick comes out clean. Allow them to cool in the pan for a few minutes before serving. They taste delicious when eaten warm and fresh out of the oven.
