Pineapple Cream Popsicles

Refreshingly Delicious! Yes, these Pineapple Cream Popsicles are an anytime treat, especially now that it’s getting hot everywhere. As you know, the temperatures are beginning to soar. Half the year is almost over and summer is right around the corner.

From kids to adults, popsicles are always a welcomed treat. I suspect when eating this cold refreshing sweet treat, the adult feels like a kid and the kid is happy to be a kid. Essentially, everybody is happy and it is a fun way to cool off.

These Pineapple Popsicles were super easy to make. You will need a few ingredients and some patience. Patience? Yes, Patience. Mainly because these popsicles have to go into the freezer for about four hours. Yes. Four hours. Anything worth having is worth waiting for right? My suggestion? Make them right before bed because you know that is a guaranteed next day treat. So while you’re sleeping, your pineapple popsicles are freezing just as they should. 

I used frozen pineapples for these popsicles. You have choices. Fresh pineapples are in season now. Also, feel free to use crushed or canned pineapples too. 

Grab your blender, crushed pineapples, heavy whipping cream, a little vanilla extract and your popsicle molds. Once blended until smooth, pour the mixture into the molds and let them freeze for about four hours.

Again, have a little patience. If you want something sweet, eat the remaining pineapples. Hopefully, there will be some leftovers. Once the popsicles have hardened in the freezer, it is time to eat your sweet and healthy treat. Remove the popsicle from the popsicle molds. Gently grab the end of the stick and the popsicle will slide out perfectly.

Ingredients

  • 2 cups crushed pineapple

  • 1 cup heavy whipping cream

  • ½ teaspoon vanilla or coconut extract

  • Equipment: 6 count popsicle molds

Directions

  • In a blender, blend all ingredients.
  • Pour into popsicle molds.
  • Freeze for 4 hours or until completely solidified.
  • Serve and Enjoy!
