Loaded Chicken Nachos

Are you Ready for some Football? It is going to be a Super Bowl Fiesta because these Loaded Chicken Nachos are sure to score the Winning Touchdown! And, when I get my chance to kiss the trophy, I am going to “Thank” the cheese, the partially mashed pinto beans, the tortilla chips, the cooked chicken seasoned with taco seasoning, the diced onion, the Mexican cilantro, the salsa and of course, the sour cream.

Whew! Now that was quite a Winning Recipe Speech! You are going to Love it and will not be able to wait an entire year to make another big dish of all of the spicy goodness. Speaking of spicy, the taco seasoning, along with the diced onion, cilantro and salsa gave it the right flavoring it needed, to make my taste buds pump my fists in the air! 

Loaded Chicken Nachos

Ingredients

  • 1 bag (5.5 oz) tortilla chips

  • 1 tablespoon 1 vegetable oil

  • 1 large 1 chicken breast, diced into small pieces

  • 1 tablespoon 1 taco seasoning

  • 2 tablespoons 2 cilantro, fresh or dried

  • 1 cup 1 pinto beans, rinsed and drained

  • 1/2 cup 1/2 Mexican shredded cheese

  • 1/4 cup 1/4 red onion, finely diced

  • Salsa of choice

  • Sour cream

Directions

  • Preheat the oven to 375°F/190°C.
  • Lay tortilla chips out on a sheet pan.
  • In a large skillet, heat vegetable oil over medium heat and add chicken, taco seasoning and cilantro.
  • Cook fully (about 5 to 6 minutes).
  • Remove from the skillet.
  • Next, to the same skillet, add pinto beans and heat enough to slightly mash. 
  • To Assemble:
  • Top tortilla chips with cheese, mashed pinto beans, cooked chicken, diced onion, salsa, sour cream and more cilantro (optional).
  • To Bake:
  • Bake at 375°F/190°C for 15 minutes.
  • Remove from the oven. Serve and enjoy! 

Yes, Nachos are mostly served as an appetizer, but this dish is so loaded with so many filling ingredients that it can stand alone as a main dish. In fact, you might want to make a big pan or two and watch both pans go very quickly. 

These Loaded Chicken Nachos took no time at all to make.  I could tell that they were going to be delicious. The smell was permeating and teasing my nostrils and I could hardly wait to try them. I loved seeing the cheese melt perfectly, and cheesy it was. Feel free to use the cheese of your choice. Mozzarella, Cheddar, American, Pepper Jack, the list goes on and on. The cheese you choose  is truly your preference. I love cheese. Cheese is a must in Mexican food.  

My Only Tip: Be sure to grab your cheeses early, because the grocery stores will need to have a lot of supply to keep up with the Super Bowl demand. It is usually hard to find Velveeta cheese during a big event, so plan accordingly. Do not go home empty handed without your cheese. There is NO party without a good platter of Nachos and chips. 

Be sure to refrain from double dipping though. Let’s be responsible, especially, when we all want to stay healthy and well. I know these Loaded Chicken Nachos are going to have you doing the Super Bowl Shuffle but, right after, you give your Winning Speech! Enjoy the Loaded Chicken Nachos!
