Blueberry Smoothie Popsicles

The weather is changing and it is beginning to get warmer. And, as of lately, hot weather reminds me of many things. One of them being…Popsicles! Since it has been so hot here in sunny Los Angeles, I have been having a whole lot of fun lately experimenting with creating different popsicle flavors. One that I am sharing with you today is my Blueberry Smoothie Popsicle.

Blueberry Smoothie Popsicles

Ingredients

  • 1 cup 1 blueberries

  • 1 cup 1 almond milk

  • 3 teaspoons 3 honey

  • 2 tablespoons 2 shredded coconut

  • 1/2 cup 1/2 ice

Directions

  • To a blender, blend together all the ingredients. 
  • Pour into popsicle molds and freeze for 6-8 hours.
  • Serve and Enjoy!

Notes

  • Any kind of fruit can be used in this recipe.
  • Frozen or fresh fruit can be used.
  • Any kind of milk can be used.
  • Water or Juice can be substituted for milk.

I just adore blueberry flavored treats so, when I decided on making popsicles for my treat after a long walk, I just knew that blueberry had to be the star. I had some popsicle molds that I have wanted to try for a while. I ordered my popsicle molds from Amazon for about $11 dollars. The molds are silicone and they hold 6 popsicles. So, if you are making these for a larger crowd than 6 people, I would advise you to buy a few of them. Trust me it is worth the price. The molds make it hard to mess up these popsicles. Just be careful to not overfill the molds, because trust me, they will overflow. It will leave you with a mess that fortunately will be easy to clean, but can be annoying to do so. 

For this recipe, I used about a cup of blueberries, some almond milk, raw organic honey, shredded coconut and ice. Now, the reason that I used shredded coconut is because I really wanted to use coconut milk, but I was quite disappointed when I discovered that I did not have any coconut milk. So, I found that the almond milk blended together with shredded coconut and the other ingredients made for the most wonderful combination. The shredded coconut gave the popsicles some nice texture in my opinion. 

Now, if you are not a fan of blueberry flavored desserts, then do not let the use of blueberries here turn you off from making these popsicles. You can make these yummy smoothie popsicles with any kind of edible berry, You can also make these yummy smoothie popsicles with any other fruit. If you like mango, then use that. If you prefer oranges, then use that. How about strawberries or pineapples? Or, how about a blend of everything! You can create your own signature flavor. You have so much leeway here and your options are truly endless. Just make it how you like it and make it nice and sweet. 

I truly love how easy these Blueberry Smoothie Popsicles are to make. The fact that I can enjoy this recipe as either a smoothie right after the ingredients are blended, a popsicle or even make the smoothie mixture into popsicles and then blend it later on for a smoothie is AMAZING!
