Chocolate Caramel Pecan Clusters are here for your enjoyment! And, they’re the most perfect holiday treat to make, share, and enjoy. Who doesn’t love a good chocolate treat? I know I do. This homemade candy has crunch and it’s chewy. Its chocolate shell makes it tender to the bite. 

Making these candies requires a few steps and a lot of love. You’ll want to either make your caramel from scratch or, melt the candies with a bit of milk and butter in a skillet like the recipe states. 

After melting the caramel, remove it from the heat. Then, add the pecans and toss them around to coat them evenly. Take a spoon and plop the coated pecans into equal-sized scoops on a parchment paper-lined plate or baking sheet. Place the coated pecans in the freezer for about 15 minutes. Once they are set, melt your chocolate melts in the microwave. Then, dip them in chocolate and freeze them for another 15 minutes.

Yes, as stated, this is a little bit of a process. However, it goes by rather quickly and it is worth it! And, once your candies are set, you can enjoy them and share them!

Ingredients

  • 1 cup pecans

  • 10 soft caramel candies

  • 1 cup chocolate melts

  • 1 tablespoon milk

  • 2 tablespoons unsalted butter

  • pinch salt

Directions

  • Line a baking sheet with parchment paper.
  • Next, in a medium saucepan over medium low, heat caramels, milk and butter together until completely melted. Take off heat.
  • Add pecans and toss until each one is evenly coated.
  • Scoop into equal portions and place on parchment paper. Freeze for at least 15 minutes.
  • Next, in the microwave, melt chocolate melts for about 1 minute. Be sure to stir every 15 seconds to ensure even melting.
  • Dip pecan clusters in melted chocolate and place on parchment lined baking sheet. Place in freezer for another 15 minutes.
  • Serve either cold or room temperature. Enjoy your treat!
