What’s your favorite fall flavor? Are you a maple lover, sweet potato lover, caramel lover, or do you like the spice that pumpkin desserts bring to your palate? Well, if you like pumpkin spice flavor, then you will for sure love these Pumpkin Muffins. 

To make this recipe you need 1 ½ cups of all-purpose flour, ½ teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, 3 teaspoons of pumpkin pie spice, 1 cup of granulated sugar, ½ cup of vegetable oil, 15 ounces of canned pumpkin, 2 large eggs, and ¼ cup of water. It is best to prepare all of your ingredients so you can make this quickly and pop the muffins into the oven. This recipe also makes a whole loaf, however, it will take 45-60 minutes in the oven at the same temperature.

Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 teaspoons pumpkin pie spice

  • 1 cup granulated sugar

  • 1/2 cup vegetable oil

  • 15 ounces canned pumpkin

  • 2 large eggs

  • 1/4 cup water

  • 1 teaspoon vanilla extract (optional)

Directions

  • Preheat oven to 350°F/177°C. Prepare a 12-cup muffin pan with liners or spray.
  • Next, in a large bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  • In a separate bowl, combine sugar, oil, canned pumpkin, eggs, and water.
  • Pour mixture into flour mixture. Add the vanilla extract. Use a rubber spatula to fold everything together.
  • Pour batter into cupcake liners and bake for 18-22 minutes, OR until a toothpick comes out clean.
  • Allow to cool in pan for a few minutes before serving. Enjoy!

Pour the wet mixture into the flour mixture. Use a rubber spatula to fold everything together. 

Pour the batter into cupcake liners or grease a muffin tin. Bake them for 18-22 minutes, or until a toothpick comes out clean. Allow them to cool in the pan for a few minutes before serving. They taste delicious when eaten warm and fresh out of the oven. 

To make them into cupcakes, allow them to cool completely. Then, frost them with some cream cheese frosting. And, voila! Just like that, you have another yummy dessert!
