Honey Lime Chicken Breasts

This recipe makes enough to serve four people. Or, if you are truly hungry, it can happily serve two people. The ingredients that you will need to make these Honey Lime Chicken Breasts are 2 large boneless and skinless chicken breasts (sliced in half widthwise), 1 tablespoon of honey, the Juice and Zest of 1 lime, 1 teaspoon of minced garlic, ½ teaspoon of paprika, salt, black pepper, and 2 teaspoons of extra virgin olive oil. 

Once you have gathered all of your ingredients, in a bowl, mix honey, zest, lime juice, garlic, paprika, salt, and pepper, to taste. Rub the mixture into the chicken breasts. Marinate the chicken breasts for 30 minutes or overnight.

Ingredients

  • 2 large boneless and skinless breasts, sliced in half widthwise

  • 1 tablespoon honey

  • Juice and zest of 1 lime

  • 1 teaspoon minced garlic

  • 1/2 teaspoon paprika

  • Salt and black pepper, to taste

  • 2 teaspoons olive oil

Directions

  • To Prep:
  • In a bowl, mix together honey, zest, lime juice, garlic, paprika, salt and pepper, to taste.
  • Rub into chicken.
  • Marinate for 30 minutes or overnight.
  • To Cook:
  • In a large skillet, over medium-high, heat 2 tablespoons olive oil. Sear chicken for 5 to 6 minutes per side or until cooked all the way through (Internal temperature must reach 165°F.)
  • Remove from skillet. Allow to rest for 5 minutes before enjoying.

  • Internal temperature must reach 165°F for chicken to be safe to eat.
