Flaky Blueberry Buttermilk Biscuits

I know you’re familiar with regular, flaky biscuits. But, are you at all familiar with Blueberry Biscuits? These biscuits are bursting with blueberries, moist, flaky, and have hints of sweetness. They are soft to the touch, buttery, and are SO easy to make. The best part about this blueberry biscuit recipe is that it only requires a few ingredients. I typically make a Sunday breakfast for my family. However, last week, I ended up sleeping in a little too late last Sunday. Everybody was already up and awake. Upon waking up, I knew I had to make something quick. So, I looked in my fridge and grabbed blueberries, buttermilk, and biscuit mix.

Ingredients

  • 2 1/4 cups Bisquick mix

  • 1/3 cup brown or granulated sugar

  • 2/3 cup buttermilk

  • 1 cup fresh blueberries

Directions

  • Preheat the oven to 425°F.
  • In a large bowl, mix together Bisquick, sugar, and milk.
  • Fold in the blueberries.
  • Spoon biscuit mixture into an ungreased baking sheet.
  • Bake for 12 to 15 minutes.
  • Remove from the oven and allow to cool for 5 minutes before serving. Enjoy!

What is great is that this recipe only requires a few ingredients. The ingredients are 2 ¼ cup Bisquick mix, ⅓ cup brown or granulated sugar, ⅔ cup buttermilk, and 1 cup fresh blueberries. That sounds easy, right? The blueberries worked so well with the biscuits. They were juicy and organic. Don’t worry if your blueberries are not that sweet. The addition of the sugar (whether white or brown) does the job of sweetening the berries. 

The prep for these blueberry biscuits should take you only about 5 minutes. Simply mix the Bisquick mix, sugar, and buttermilk. Then, fold in the blueberries. Make sure that as you fold them in,  you press down on the mixture with your spoon. This will help them to distribute evenly through the mixture.  

Next, spoon the mixture onto an ungreased baking sheet. It should make about 8 large biscuits or 12 smaller ones. Baking should only take 12 to 15 minutes at 425° F. This will give you a soft and fluffy biscuit. However, if you want a harder biscuit, then bake them at 450° F for 12 minutes.  I don’t like hard biscuits, but I understand that everybody has their preference. After the blueberry biscuits come out of the oven, allow them to cool for at least 5 minutes before serving.

Pair these with any sides or jams that you like. I served these with some breakfast staples such as home fries, eggs, turkey bacon, and jam. The jam was a blueberry jam that I made from scratch. And, it only enhanced the berry and butter flavor! 

I truly hope you enjoy this quick and easy recipe. And, make these as a breakfast or a quick treat! Making this taught me that sometimes the best recipes are so simple and unique!
