Your kitchen will smell divine when you make this Coconut Rice! Coconut Rice is a wonderful side dish to make to jazz up your meal. It can be served along with meat, stir fry, or your favorite foods! 

So, you might wonder what makes this rice taste like coconut? Well, the reason that this Coconut Rice is fragrant with a hint of sweetness is due to the addition of coconut milk. Yes! Coconut Milk is used in this recipe. The rice is boiled in a mixture of coconut milk and water along with salt.

The step that you don’t want to miss when it comes to making coconut rice is rinsing your rice. Rinsing your rice is crucial in removing its starch. Removing the excess starch helps the rice to not clump together. You want your rice to be separate and not mushy like porridge. Trust me. Once your rice is cooked, you’ll be thanking yourself for rinsing it.

This recipe follows the basic process of cooking rice in a pot on the stovetop. The rice should be brought to a boil first, and then turned to low heat and covered to simmer. It only needs to simmer for 15 to 20 minutes. This time frame yields the most perfect rice!

Ingredients

  • 2 cups white Jasmine rice

  • 14 oz coconut milk

  • ½ cup water

  • ½ teaspoon salt

  • black pepper, to taste

Directions

  • Rinse rice in cold water and drain.
  • In a medium-sized pot, add rice, coconut milk, water, and salt. Bring to a boil.
  • Then, reduce heat to low and cover to simmer for 20 minutes.
  • Uncover. Rice should be fluffy. Add black pepper and stir.
  • Serve and Enjoy!
