When I say you will only need a saucepan, a platter lined with wax paper and a refrigerator to store these no bake cookies, it is truly hard to believe. But, believe me when I tell you that it is just that simple. I also believe that you will be making these for years and years to come.

This is by far the easiest cookie that you will EVER NOT bake. Of course, you will use the stove to get the wet ingredients hot and bubbly and then add in the other two ingredients to complete the task. The refrigerator can handle the rest. Once the cookies are hardened, you will not be able to resist eating just one. I guarantee you.

I have always enjoyed making this no bake cookie recipe because I usually have all of the ingredients in my pantry and it is a quick and easy cookie to not bake.

No-Bake Cookies

Ingredients

  • 1/4 cup unsalted butter (melted)

  • 1 cup white sugar

  • 1/3 cup milk

  • 2 tablespoons unsweetened cocoa

  • 1/2 teaspoon vanilla extract

  • 1/4 cup peanut butter (I used creamy)

  • 1-1/2 cups quick oats

Directions

  • In a medium saucepan, over medium-high heat, combine the butter, sugar, milk, unsweetened cocoa powder and vanilla extract. Let the mixture come to a boil and stir.
  • Remove from the heat and immediately mix in the peanut butter and quick oats. 
  • Allow the mixture to stay in the saucepan for about 3 minutes. (Doing this allows the sauce to thicken without having to add more peanut butter.)
  • Place in the refrigerator to set for about 30-35 minutes. Enjoy!

By now, you have figured out that you do not have to turn your oven on.  Just pull open your refrigerator door. With a little patience to allow the cookie to harden and get cold, your taste buds will be ready to devour more than one. I love all of the ingredients in this recipe. The cookie is creamy because of the peanut butter.  It is crunchy because of the oatmeal and it is decadent because of the cocoa.  

I used the stovetop for less than five minutes to combine the butter, sugar, unsweetened cocoa powder, milk and vanilla extract together.  I let these ingredients get hot and bubbly before turning off the stovetop. Immediately afterwards, I added in the peanut butter and quick oats.

It will look a little pasty at first. Feel free to add more peanut butter if you wish, but I found by leaving it in the saucepan for a few extra minutes, it thickened up. I was able to scoop out twelve cookies and placed them on the wax paper lined platter.

I then placed the cookies in the refrigerator to chill for about 30-35 minutes. I love these cookies cold. I love the simplicity of this no bake dessert. Easy and effortless and very little clean up. I truly wish all recipes could be this simple and taste so decadent right?

Feel free to exclude the peanut butter if you have a nut allergy. It will taste good too with the quick oats and other ingredients. If you want to make a bigger batch, just double the recipe. It is absolutely dangerous for me to have too many in the house because I have already consumed three of them.

Again, all that is required is a little patience to let these cookies set. Your lack of labor in the kitchen will still reap huge rewards. How often does that happen? Your friends and family will be asking you to share the recipe and discover your no bake secret. Truthfully, these no bake cookies are too good to keep to yourself. This cookie is now out of the bag or simply: the refrigerator.
