I was craving chocolate cupcakes. However, I did not have any frosting or enough ingredients to make frosting. So, I decided to just make the batter and forgo the frosting. And just like that, my craving for chocolate cupcakes turned into One Bowl Chocolate Muffins.

I wanted to use chocolate chips, but I have been doing a lot of baking lately; and I simply did not have any chocolate chips to put into the muffins. You are probably thinking, “Somebody needs to make a grocery store run.” Yes, it  would have been a wonderful addition, but because I am an optimist, I turned lemons into lemonade. Or turned Chocolate Cupcakes into Chocolate Muffins.

  • 1 cup granulated sugar

  • 1 1/2 cups all-purpose flour, sifted

  • 1/2 cup unsweetened cocoa powder

  • 1/2 teaspoon salt

  • 1 large egg

  • 1/2 cup milk

  • 1/2 cup hot coffee

  • 1/4 cup melted unsalted butter

  • 1 1/2 teaspoons vanilla extract

Directions

  • Preheat oven to 350°F/180°C. Prepare a muffin pan with liners. 
  • In a large bowl whisk together sugar, flour, unsweetened cocoa powder, baking powder and salt.
  • Next, mix in egg, milk, hot coffee, melted butter, and vanilla extract.
  • Fill cupcake liners ¾ full and bake for 17 to 20 minutes or until a toothpick comes out clean when inserted in the center.
  • Serve and Enjoy!

These Chocolate Muffins are rich and flavorful; so they truly do not  need  chocolate chips or chocolate chunks.  If you want a little bit of added texture or just to see that melted chocolate when you take a bite, then certainly feel free to add some chocolate chips.

I love one bowl recipes, so you can imagine my joy when I decided that I was going to share this recipe with you. It is quite easy, doesn’t require too much work and just a little bit of arm power. 

For this recipe, you can use either boiling water or hot coffee. I chose the hot coffee to help the chocolate stand out more flavorfully. The aroma of the coffee enveloped my nostrils and I could hardly wait to try one!

Hopefully you enjoy making this recipe and keep it in your rotation. You can have these muffins for breakfast, or even as a snack. Chocolate Muffins are always a great food to serve to your guests or make for little children. They will  absolutely love it! And if your kids are picky eaters, why not  sneak in some healthy ingredients in the bowl. They will not know that chickpeas or spinach is part of the recipe and you can tell them when they are grown someday. I won’t utter a word. I promise. You can even put mashed bananas in the bowl for a little more added sweetness and of course, potassium.I guarantee you that you have all of the ingredients in your pantry that you will need to make these One Bowl Chocolate Muffins. Well, maybe minus the chocolate chips. But remember, they are optional anyway. Happy Baking!!
