Have you ever made Roasted Artichokes before? Well, if not, then I don’t blame you. The thought of even trying to make artichokes can be quite intimidating! I finally took the plunge this past week and picked up a few Globe Artichokes from my local grocery store. Once I arrived home, I just couldn’t wait to dive in and learn how to make them for myself. It was quite the experience!

Ingredients

  • 2 globe artichokes

  • 1 small lemon

  • Olive oil for basting

  • salt and black pepper, to taste

  • To Serve:
  • Dipping sauce of choice or melted butter

Directions

  • To Prepare the Artichokes:
  • Cut 1-inch off the top of the artichokes where the leaves bunch together. Cut the bottom stem, leaving about 1-inch of stem..
  • Pluck off any leaves near the stem.
  • Trim the pointy and pokey tips of each leaf. Rinse the artichokes under cold water to clean.
  • Slice the artichokes in half.
  • Rub lemon juice all over the artichokes to prevent any browning.
  • Brush the artichokes with olive oil and add salt and pepper.
  • Place in a pan and roast in a 400°F oven for 30-35 minutes, or until the outer leaves and stem can be easily pierced through with a fork.
  • To Eat the Artichokes:
  • Peel the leaves off one by one and dip them in sauce or eat them plain. Use your teeth to remove the fleshy, flavorful part and enjoy! The center leaves are fleshier.

After bringing the artichokes home, I watched countless videos on how to properly prepare and roast them. Being able to be hands-on while I followed along to a video made me all the more confident in my artichokes-making abilities. I’ve gathered enough information and experience to pass on to you.

You should know that there are different types of artichokes, however, Globe Artichokes are the most popular. Also, do not be alarmed if your artichoke has some browning, such as brown spots. It is typically said that it’s a good thing since the brown spots tend to add more flavor. I don’t know that to be the case, but I am hoping it is. So, just know that a little browning is OK!

Only a few ingredients are needed to give these artichokes flavor! To get started on making these artichokes, you will need 2 globe artichokes, 1 small lemon, Olive oil for basting, and salt and black pepper, to taste.

To prepare the artichokes, first, start by cutting 1-inch off the very top where the leaves are tight. Cut the bottom stem off too, leaving only about 1-inch of the stem. Pluck off any leaves near the stem. Trim the pointy and pokey tips of each leaf. Rinse the artichokes under cold water to clean them. Sometimes debris and dirt can be between the leaves, so rinsing is best.

After rinsing, slice the artichokes in half. Then, rub lemon juice all over the artichokes to prevent any browning. Brush the artichokes with olive oil and add salt and pepper. Finally, place the artichokes in a pan. Roast them in a 400°F oven for 30-35 minutes, or until the outer leaves and stem can be easily pierced through with a fork. The leaves should easily be able to come off when tugged. Depending on your oven, you might need to cook the artichokes for a little bit longer. Try cooking them in 5-minute increments if they need longer cooking time. That’s it!

Eating these is fun! Now, you know how to prepare and cook globe artichokes for yourself! I found roasting them to be the easiest part. Preparing these took a bit of work. This is certainly a labor of love. So give yourself enough time to prepare these. Preparing 2 artichokes should only take about 15 minutes.
