Easy Stovetop Rice Pudding

Do you like pudding?  Pudding is a food with a wonderful texture. It comes in many different savory and sweet flavors. This Quick Stovetop Rice Pudding recipe is on the sweet end of the spectrum. However, do not fret it’s not overly sweet. It has just the right amount of sugar to satisfy any sweet tooth.

The light sugar taste made rice pudding one of my favorite desserts as a child. My father introduced me to it. He would always buy the six-pack of it from our local grocery store. Then, on days when I had tests at school, he would sneak some into my lunchbox to brighten up my day. It always did!

Ingredients

  • 1 cup cooked white rice

  • 2 cups milk, divided

  • 1/2 teaspoon salt

  • 1 egg, beaten

  • 1/2 cup granulated sugar

  • 1 tablespoon unsalted butter

  • 1 teaspoon vanilla extract

Directions

  • In a medium saucepan, combine cooked rice, only 1 cup milk, and salt over medium heat. Stir and cook for 15 minutes. 
  • Stir in the remaining 1 cup milk, egg, sugar, unsalted butter, and vanilla extract.
  • Cook for 10 more minutes.
  • Remove from the heat. Allow to rest until thickened to your liking and serve. Enjoy!

If you are familiar with rice pudding, then you might know that it is typically made with uncooked rice. This particular rice pudding, however, is made from precooked white rice. So, if you have any leftover rice, then use it for this recipe. It can be hard to accurately eyeball how much rice to make. If you made too much rice for dinner, then that’s your reason to make this dessert! 

To get started on making this, you will need 1 cup of cooked white rice, 2 cups of milk,  ½ teaspoon of salt, 1 beaten egg, ½ cup of granulated sugar, 1 tablespoon of unsalted butter, and 1 teaspoon of vanilla extract. 

To make this Easy Stovetop Rice Pudding, combine the white rice, only one cup of milk, and salt over medium heat. Give it a good stir. Allow it to cook for 15 minutes. After 15 minutes, stir in the remaining 1 cup of milk, the egg, sugar, butter, and vanilla extract. Cook the mixture for 10 more minutes. Then, remove it from the heat. Allow it to rest until thickened to your liking. Then, simply serve and Enjoy! It’s as easy as… well, pudding! 

I haven’t tested to see if this rice recipe works with brown rice. Although, I am sure it will be the same. You should give it a try and let us know in the comments below how it went! Feel free to play around with this recipe with other types of rice. Even leftover unseasoned quinoa will be tasty!
