The Best Breakfast Cookie

There are so many breakfast choices we can make today. Some of us love breakfast so much that we choose to have Breakfast for Dinner. This tradition started when I was a kid and followed me into my adulthood. Some habits are hard to break and for me, this is a good habit to have.

Breakfast choices that come to mind for me are smoothies, oatmeal, cereal, a buffet breakfast with eggs, bacon, pancakes, grits, and orange juice. And, some of us wake up and decide to keep it simple. This is what I decided to do with this recipe, the Breakfast Cookie.

Ingredients

  • 1/2 banana, mashed

  • 1 heaping tablespoon peanut butter

  • 1 ½ cups quick oats

  • 1/4 cup blueberries

  • 1 teaspoon pure maple syrup

  • 1 teaspoon cinnamon

Directions

  • Preheat oven to 325°F/165°C.
  • In a bowl mix together mashed banana and peanut butter. 
  • In a separate bowl, mix together oats, blueberries, pure maple syrup and cinnamon.
  • Add banana and peanut butter mixture to oat mixture.
  • Stir well to combine. 
  • Shape mixture into 6 individual cookies.
  • Bake for 12 to 15 minutes.
  • Serve and Enjoy!

Yum Yum Breakfast Cookie. It is delicious, delightful, and quite filling. It will definitely excite your taste buds. You may want to make an extra batch because you might just like them that much. I know I did.

This Breakfast Cookie is super easy to make. It takes no time at all to gather and mix the ingredients and let the oven do its job. That’s it. Breakfast is served. You can choose to eat this cookie warm or cool. I love to eat them warm with a freshly brewed cup of my morning coffee. This cookie is quite satisfying. Of course, if your palate needs to be convinced, even more, have another one. You can make them as big or as small as you like.

I used blueberries as an ingredient in this Breakfast cookie, but if you want to try another fruit, then get as creative as you wish. I love blueberries and they tend to be sweet all year long. The sweetest time of the year for blueberries in North America is June-August. But don’t fret, blueberries can also be placed in Ziploc bags and frozen in your freezer for about six months.

I found out from doing my Google research that “the darker and bluer in color the blueberry is, the sweeter it is.” Remember that Google tip when choosing your blueberries.

Blueberries aid in a plethora of health benefits too. They are loaded with antioxidants, can even help with cholesterol levels, and may even lower blood pressure.
