Ingredients

  • For the Filling:
  • 2 medium 2 soft shell tortillas

  • 1 1 cooked chicken breast, chopped (or you may use shredded rotisserie chicken)

  • 1 cup 1 romaine lettuce

  • 1/4 cup 1/4 carrot, shredded

  • For the Sauce:
  • 1 teaspoon 1 sesame oil

  • 3 tablespoons 3 peanut butter

  • 1 tablespoon 1 soy sauce

  • 1 tablespoon 1 water

  • 1 teaspoon 1 honey

  • 1/2 teaspoon 1/2 chili powder

  • Salt and pepper, to taste

Directions

  • In a small saucepan, over low heat, mix sesame oil, peanut butter, soy sauce, water, honey, chili powder, salt, and pepper, to taste.
  • Toss cooked chicken breast, lettuce and shredded carrot in sauce mixture. 
  • Assemble filling on tortillas and wrap. 
  • Slice in half. Serve and Enjoy!

For this particular recipe, I decided to go to my pantry and envision myself in Thailand while preparing this Thai Chicken Wrap recipe. The Thai wrap is just as delicious as it sounds. Yes, I was standing in my kitchen, and in my mind, I was in the heart of mainland Southeast Asia. I have Thailand on my bucket list of countries to visit. I can hardly wait to sample all of the mouth-watering foods when I go.

This is a quick and easy recipe to make. My family gave me a BIG thumbs up and requested next time I make extras for leftovers. Of course, there would have been plenty of leftovers if they could eat just one. I cook as if I am feeding extra guests because you never know who is going to be hungry. I’m guessing I underestimated how good these wraps would be or how hungry they would be.

They say “the way to a man’s heart is through his stomach” but I believe the way to “anyone’s heart” is through their stomach. Perhaps that original saying is a bit antiquated and while it might be true, I am a woman and I love good food too.

Even babies can tell when something tastes good or not. I love seeing their little faces squeal in delight when they get their first taste of people’s food. I also love seeing them spit out food they don’t like. Babies know early on what they like and what they don’t like. It’s all in the palate. The palate never steers you in the wrong direction.

I made a homemade peanut sauce for this Thai Chicken Wrap. Of course, if you have a peanut allergy, then you will need to improvise this dish. Some good choices might be cashew butter, almond butter, or even SunButter. Either way, you decide to make this dish, it’s sure to be a winner.
