I like to buy a good piece of salmon without the scales.  It may cost a dollar or two more; but for me, it has been well worth it. Yes, if you wish, buy your salmon with scales.  The scales usually loosen when cooked and you can save yourself a buck or two. Your salmon. Your choice. As for me and my salmon, I like it De-scaled.  It saves me time and I don’t have to concern myself with fussing with the scales on my plate. I decided to make a marinade for this salmon and it was just the right amount of zest and zing I needed.
