Lemon Garlic Butter Spaghetti with Seared Chicken

Simple and Satisfying. Two words to describe this spaghetti dish perfectly. I had fun making this one because, I tried fiber spaghetti for the first time and it was extremely delectable. I enjoyed every forkful. I was extremely pleased with my portion size and felt full, not stuffed. As a child, I always enjoyed going to Italian restaurants because I knew there would be large portions of food, and the highlight was taking home a doggie bag. I  knew what my lunch would be the next day. Did I mention how much I love food? I am guessing you figured that out by now. That is why you are going to embrace this meal.  You are in for a real memorable eating experience with this one.

This particular spaghetti entree, yields enough to eat the next day as well. I thoroughly enjoyed creating my own lemon garlic butter sauce and searing this chicken perfectly. Truthfully, the chicken can be eaten as a stand alone meal; because, it has lots of protein. So can the spaghetti because you will get your carbs. When the spaghetti, chicken and lemon garlic butter sauce form a trio, your taste buds will be truly thankful.

Ingredients

  • For the Spaghetti Pasta:
  • 1 package 1 spaghetti pasta, cooked according to package instructions

  • For the Seared Chicken:
  • 1 1 large boneless and skinless chicken breast, sliced in half lengthwise

  • salt and pepper to taste

  • 2 teaspoons 2 olive oil for the pan

  • For the Lemon Garlic Butter Sauce:
  • 4 tablespoons 4 butter

  • 2 tablespoons 2 olive oil

  • 2 cloves 2 garlic, minced

  • 1 teaspoon 1 lemon juice

  • 2 teaspoons 2 Italian seasoning

  • salt and pepper, to taste

Directions

  • Boil 1 package of spaghetti pasta according to package instructions. 
  • Meanwhile, season the chicken breast with salt and pepper to taste. Sear in a medium sized pan with olive oil over medium-high heat for 6 minutes on each side. 
  • While the pasta and chicken cook, work on making the Lemon Garlic Butter Sauce. In a saucepan over medium-high heat, melt butter together with olive oil, minced garlic, lemon juice, Italian seasoning, salt and pepper. (This should take about 30 seconds, as you do not want the garlic to burn.)
  • Once everything is finished cooking, toss spaghetti pasta in the sauce and slice up the chicken to add on top. Enjoy with bread and wine!

Notes

  • This recipe works with any kind of pasta.

I made the lemon garlic butter sauce with simple ingredients. I used butter, olive oil, lemon juice, fresh garlic, Italian seasonings, salt and pepper. Absolutely delicious! I made a little extra because the sauce can be stored in the refrigerator for up to three days. I promise you though, that it will not last that long.

The spaghetti takes about 7-9 minutes to boil, and the seared chicken took less than 15 minutes to sear on each side. Hopefully, you will try this recipe. However, the next time you want to shave off time, prepare your chicken in advance. You can refrigerate the chicken for a few days and just heat it up with the pasta when you are ready for a quick sit down lunch or dinner. 

Feel free to replace chicken with shrimp, or whatever meat you desire, if you wish. Or, if you do not eat meat, this spaghetti is just as good with the lemon garlic butter sauce. It is something for everyone and served in many different ways. If you like bread like I do, why not indulge? I will often make myself a simple salad to eat first and then, have my entree. I like a good Chardonnay as my drink of choice.

I have tried to create the ambience of the restaurant. Each time I make this dish, I keep getting closer.  Dessert is usually something light but truthfully, I love good tiramisu. I am working on creating my own soon. Meanwhile, dessert or not, wine or water, savor this delightful dish. I just know you will create your own “Perfetto” way of enjoying your meal and atmosphere. I always do!
