Ingredients

  • 1 pound lean ground beef

  • 2 bell peppers, seeded and diced (any color)

  • 4 cups chunky salsa

  • Two (15 oz.) cans kidney or pinto beans, rinsed and drained

  • One 1-ounce packet chili seasoning (McCormick is what I used)

  • 2 cup low-sodium beef broth

Directions

  • In a large pot, over medium high heat, brown and crumble the beef.
  • Add diced bell pepper, salsa, beans, chili seasoning and beef broth.
  • Bring to a boil and then reduce to simmer for 20 to 30 minutes. 
  • Serve with tortilla chips and enjoy!

This is the perfect time of year to make Beef Chili too. Let me backtrack. Actually, ANY TIME of the year is the perfect time to make chili, but you get my point. If you live on the East Coast or Midwest, then after you are done digging out from all of the snow, nothing will please your insides more than a hot bowl of Beef Chili.

The trick is to make extra and freeze it because you never know when Mother Nature is going to surprise us with a huge snowfall. While I miss living on the East Coast, I truly do not miss the BIG snowstorms. And, yes, I loved all of the seasons too. 

As a child, I never had to dig out. That was my parents’ job or the snow plow crew. My job as a kid was to have as much fun as I could, sledding down the hill, trying to avoid my neighbor’s tree. Fortunately, it was a small tree when I was young, so my parents weren’t too worried about my sister and me, along with our neighborhood friends, all in our snow gear and carrying our sleds, going up and down that big old hill for what seemed like hours. Then, when we wanted to warm our hands, we would come into the house, sit by the fireplace and go right back out. Fortunately, when we were finally ready to come in, my parents had a Hearty bowl of Beef Chili, along with some good old cornbread, awaiting our arrival.  

Awww, parents truly know the way to a kid’s heart, especially mine. A good meal does the trick for me every time. It warms my Heart, Body and Soul. I, too, hope you will enjoy making this Beef Chili recipe. And, remember to make extra just in case Mother Nature keeps surprising us. Eat Hearty!
