Grilled Watermelon Balsamic Salad

Watermelon Balsamic Salad is a dish that is easy to make. If you’ve ever been to an upscale steakhouse, then you’ve surely seen this offered on the menu. So, whether you want to impress your house guests with a fancy appetizer, or simply make a unique dish for yourself, this Watermelon Balsamic Salad is the recipe for you! 

To make this recipe, you will need, Watermelon (seeds removed), Olive oil, Salt, Arugula, Lemon juice, Balsamic vinegar, and Brown sugar.

Grilling watermelon releases its natural sugars and caramelizes the outside. Use either an indoor grill or an outdoor grill. Slice the watermelon into big disk-shaped pieces. To do so, use a wine glass, cookie cutter, or knife. Pat the watermelon disk dry with a paper towel and brush it generously with extra-virgin olive oil. 

To cook the watermelon for this salad, grill it on medium-high heat for 2 to 3 minutes per side or until grill marks appear. Don’t worry if the watermelon doesn’t have grill marks. It will still be juicy and delicious! 

Season the watermelon disk with a bit of salt and serve with arugula and balsamic glaze drizzled over top. 

Since arugula is peppery and robust in flavor, it is used to give the salad contrast and dimension. The sweet watermelon and the peppery arugula come together to make a unique flavor. If you are not a fan of arugula, then you can use Romaine or mixed greens. Romaine tends to blend in with the taste of the watermelon since both foods have high water content.

As a dressing for this salad, we’re going with a balsamic glaze. And it’s easy to make! The balsamic glaze makes for the most perfect pairing. This glaze is made by mixing balsamic vinegar and granulated or brown sugar. We’re using brown in this recipe. Simmer about 3 tablespoons of balsamic vinegar with 1 teaspoon of brown sugar until the sugar dissolves. Finally, drizzle the balsamic glaze over the arugula and watermelon. You can do this in a pretty design or simply, drizzle and pour.

Ingredients

  • Two 1” thick disks watermelon (seeds removed)

  • Olive oil

  • Salt, to taste

  • 2 cups arugula

  • Lemon juice

  • 3 tablespoons balsamic vinegar

  • 1 teaspoon brown sugar

Directions

  • For the Watermelon:
  • Slice watermelon into disks as pictured.
  • Pay dry with a paper towel and brush with olive oil.
  • Brush your pan or grill with olive oil and grill on high heat for 2 to 3 minutes per side.
  • Season with salt. Plate serve with arugula, a drizzle of balsamic glaze and a squeeze of lemon juice.
  • For the Balsamic Glaze:
  • In a small saucepan over medium heat stir together 3 tablespoons balsamic vinegar with 1 teaspoon brown sugar until sugar dissolves.
  • Reduce heat to low to simmer for 2 minutes.
  • Remove from heat and drizzle over salad.
