For this recipe, you need 2 tablespoons olive oil, 1 finely diced small onion, 1 tablespoon of garlic powder, 1 teaspoon of cumin, 2 cups of uncooked white or brown rice, 4 cups of vegetable broth, 2 cups of drained and rinsed black beans, 1/4 cup of lime juice, salt, black pepper, and cilantro or parsley for garnish.

Ingredients

  • 2 tablespoons olive oil

  • 1 small onion, finely diced

  • 1 tablespoon garlic powder

  • 1 teaspoon cumin

  • 2 cups uncooked white rice

  • 4 cups vegetable broth

  • 2 cups black beans, drained and rinsed

  • 1/4 cup lime juice, or to taste

  • salt and black pepper, to taste 

  • Fresh parsley for garnish

Directions

  • In a large saucepan over medium-high, heat olive oil and sauté diced onion until translucent. About 4-5 minutes.
  • Add garlic powder, cumin, uncooked rice, vegetable broth, and beans. Bring to a boil and then reduce heat and simmer for 25 minutes.
  • Remove pot from heat and add lime juice. Season with salt and black pepper as needed.
  • Garnish with fresh parsley. Serve and enjoy!

To easily make this, heat 2 tablespoons of olive oil in a large pot over medium-high. Saute the diced onion for about 5 minutes or until it is translucent. Add the garlic powder, cumin, uncooked rice, vegetable broth, and black beans. Next, bring everything to a boil. Once it’s brought to a boil, reduce the heat to low and simmer it for 25 minutes. You do not need to cover it with a lid. 

After 25 minutes, the rice should then be nice and fluffy and still have some moisture. Remove the pot from the heat and add the lime juice. Finally, season the black beans and rice with salt and pepper, to taste. Then, it is ready to be enjoyed!

Serve this meal in bowls and garnish with some fresh parsley and cilantro. You can even add some more lime juice if you wish! This meal lasts in the refrigerator for up to 5 days. Keeping it for any longer is not recommended. Beans can spoil after that period. This Black Beans and Rice meal is perfect for both lunch and dinner. It is certainly easy to make and can be an appetizer, side dish, or a full meal. Enjoy this dish and the flavors it brings to your palate!
