For best results when making these Cajun Chicken Thighs, be sure to pat them dry well with a paper towel. These chicken thighs must be dried well to ensure that they get a beautiful, golden outer crust. Having too much moisture on them will only cause them to steam and have a soft and moist outer skin. These chicken thighs only get seared for about 5 to 6 minutes per side before going into a 350°F/180°F oven for 40 minutes. You want to make sure that you don’t skip the searing part because it yields a beautiful golden color. 

While these are baking in the oven, go ahead and set your table. You’re going to be ready for some delicious chicken when they come out of the oven. Be sure that the chicken thighs reach an internal temperature of at least 165°F. That’s how you know they are safe to eat. Depending on how your oven cooks, you might need to add five minutes or so to the cooking time. So, to be safe, always use an internal thermometer. You can get them online for about $10.

Ingredients

  • 4 4 bone-in chicken thighs, skin removed

  • 1 teaspoon 1 garlic powder

  • 1 teaspoon 1 Cajun seasoning

  • ½ teaspoon dried cilantro

  • Black pepper, to taste

  • 2 tablespoons 2 olive oil

Directions

  • Preheat the oven to 350°F/180°C.
  • Using a paper towel, pat chicken thighs dry and season with garlic powder, Cajun seasoning, cilantro and black pepper.
  • To a large cast iron skillet or dutch oven, add 2 tablespoons olive oil and sear thighs on the stove over medium-high heat for 5 to 6 minutes on each side.
  • Once the thighs have a beautiful golden crust, transfer the skillet to the oven and bake for 40 minutes or until the internal temperature of the chicken reaches 165°F when a meat thermometer is inserted.
  • Remove from the oven and transfer to a paper towel lined plate to get it of any leftover oil. Allow to rest for 10 minutes before serving. Enjoy!
