This recipe is a quick one to prep. Ready to get to it? Alright, let’s go! To start you will need only a handful of ingredients. You will need 1 ½ pounds of red potatoes, 2 tablespoons of lemon juice, 1 tablespoon of extra virgin olive oil, 1 teaspoon of garlic powder, ½ teaspoon of Italian season, salt, and pepper, to taste. That’s it! 

I always like to tell you to use salt and pepper, to taste because your salt and pepper tolerance might not be the same as mine. I might want more salt in my dish while you might want a little bit less. Use however much salt and pepper you want. However, just be sure to use it a little bit at a time and then taste the mixture. That way, you don’t overdo it. And, if you taste it and find that you need more, you just add as much as you need. 

To make the potatoes, first, preheat your oven to 425°F/220°C. Next, wash your potatoes and pat them dry. Then, cut them into bite-sized pieces. Next, in a large bowl, mix the lemon juice, olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss in the potatoes and coat them evenly. Spread them out on a baking sheet and bake them for 40 minutes, or until they’re tender to your liking. And, finally, Serve and Enjoy your Lemon Garlic Roasted Red Potatoes!

  • 1 ½ pounds red potatoes, washed and cut in bite-sized pieces

  • 2 tablespoons lemon juice

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon Italian season

  • Salt and pepper, to taste

Directions

  • Preheat the oven to 425°F/220°C.
  • Next, in a large bowl, mix together lemon juice, olive oil, garlic powder, Italian seasoning, salt and pepper, to taste.
  • Toss in potatoes and coat them evenly.
