Carrot Salad with Ginger Vinaigrette Dressing

The cartoon character, Bugs Bunny, may have been on to something when he ate his carrots. He was introducing a healthy diet right before our very own eyes. I loved his catchphrase, “What’s up Doc?” As a child, I had no idea what he was saying because he spoke so fast. I just enjoyed seeing him chomping on his carrots.

Carrot Salad with Ginger Vinaigrette Dressing

Ingredients

  • 4 large carrots, washed and grated or sliced into ribbons

  • 5 to 6 thinly sliced pieces of ginger

  • 1 teaspoon grated ginger

  • 1 tablespoon white vinegar

  • 1 tablespoon honey

Directions

  • Place shredded carrot and sliced ginger in a bowl.
  • In a smaller bowl, make the dressing by mixing grated ginger, vinegar and honey.
  • Pour over shredded carrots/ginger and toss.
  • Serve immediately or cold. Enjoy!

I always liked carrots too. I like them raw or cooked. I usually like them in a salad or in a vegetable medley of some kind. I decided to keep this recipe simple and make a Carrot Salad with Ginger Vinaigrette Dressing. Yummy! So easy to make and so good to eat. And, it’s healthy too, I might add. I did a little research and my trusted friend, Google stated the Benefits of a daily carrot salad include:

  • Aids the liver in the detoxification process by carrying the toxins away via the carrot fiber.
  • Stimulates digestion.
  • Increases thyroid hormone conversion.
  • Decreases stress hormones; adrenaline and cortisol, as well as, aldosterone and serotonin.
  • Relieves premenstrual symptoms.

Thank you Google! I will also add that carrots are a great source of Vitamin A. When I was younger, my family members would tell me to always eat my carrots for good vision. I thought that was odd, but that was great advice. They were truly on to something. Now, I pass that information on too. All the many reasons to eat a raw carrot salad if not daily, at least a few times a week.  

I usually keep carrots in my refrigerator and when deciding what recipe to share with you, fortunately, everything that I needed was right at my fingertips. For this Raw Carrot Salad, feel free to make a little extra. If you food prep, go ahead and save yourself time and put a nice sized portion in a container or a Ziploc bag. That way if you are running late for work or an appointment, you can just grab and go. That is what I do. If I don’t, I am usually grazing on foods that I don’t necessarily need, because I didn’t properly plan.
