Maple Glazed Carrots

Only one word is needed to describe Maple Glazed Carrots- YUM! Yep, three letters and a one syllable word, pretty much sum up this must try dish. Your family and friends will be grateful that you made it and you will be honored to be the one to please their palates.

Which brings me to the perfect time of year to make Maple Glazed Carrots. You guessed it! It is almost Thanksgiving and while there will be plenty of turkey, stuffing and greens left over, that just might not be the case with this mouthwatering dish. 

Maple Glazed Carrots

Ingredients

  • 1 pound medium carrots, scrubbed and peeled

  • salt and pepper, to taste

  • 1/4 cup pure maple syrup

  • 2 tablespoons unsalted butter

Directions

  • Preheat oven to 400°F/200°C. Slice carrots in half lengthwise.
  • Place carrots in a bowl and toss with salt, pepper, and pure maple syrup.
  • Pour carrots in a baking dish and add 2 tablespoons butter.
  • Bake for 1 hour.
  • Remove from oven and Serve and Enjoy!

Notes

  • Any type of carrots can be used for this recipe.

I do believe you might want to double your recipe because I can attest that these carrots are absolutely delicious. When families get together, memories are created. Your aunt Suzy might make the best green bean casserole, your cousin Daisy might bring her blue ribbon potato salad and your dad, who has been the King of carving the juiciest turkey for many years, maybe even better than a gourmet chef, may have his chest poked out all day, but here you come with a surprise new dish that might just trump all of them. 

For one, it is such a pretty and colorful dish. Secondly, it smells really good and Lastly, it tastes even better! But, the real kicker of the evening will be that no one is sleepy like they might be after eating all of that turkey loaded with tryptophan, or consuming heaping spoonfuls of potato salad and devouring all of that green bean casserole loaded with lots of sodium. I love Thanksgiving food and do not feel guilty at all when I stuff my face, fall asleep and go back for seconds. Besides, everybody is happy and that’s how good food makes you feel. Which is exactly why you are going to love this dish. 

Carrots are naturally sweet anyway, but adding the touch of maple syrup, gives it just the right touch of sweetness. I was quite proud of how super easy and quick Maple Glazed Carrots were to make. You, too, will enjoy them as well. And, if you want to try the multi-colored carrots like I did, feel free. Regular orange carrots will work just fine too. I personally like the orange, yellow and purple blend. It doesn’t take long to bake in the oven and within minutes, the smell permeates throughout the kitchen.

I learned as a young girl that carrots are good for your vision, so I ate lots of carrots, but still needed eyeglasses. I found out later that carrots are rich in beta carotene; but, have no real effect on restoring your vision. I am sure you heard the same wive’s tale too. The one thing I can clearly see, is that you are going to absolutely love this recipe.

And, your aunt Linda will start bringing Maple Glazed Carrots for every Thanksgiving celebration and waiting to receive her well-deserved compliments; knowing that you were grateful because, just like all of the many dishes to try, she pulled a Martha Stewart moment in the kitchen-Beautiful and Tasty. But, not only are they visually pleasing and tasty, they are so easy to make. A few simple ingredients and your dish will be most memorable and extremely satisfying.
