These Pumpkin Spice Oatmeal Peanut Butter Balls are packed with some pretty powerful ingredients. They satisfy any sweet tooth craving. So, it is a good thing that I always have these ingredients on hand. It is great that way because I can whip up a batch quickly and eat them for a couple of weeks. In addition to satisfying my sweet tooth, these cute desserts also offer an excellent source of fiber and protein. Peanut butter is packed with protein and oatmeal is a good source of fiber.

Ingredients

  • 1 cup quick oats

  • 1 cup peanut butter

  • 1 teaspoon pumpkin pie spice

  • 2 teaspoons dried cranberries

  • 1/4 cup mini chocolate chips

  • 1/4 cup coconut flakes

  • 1/4 cups crushed almonds

Directions

  • In a medium-sized bowl, stir together quick oats, peanut butter, pumpkin pie spice, dried cranberries, chocolate chips, coconut flakes, and crushed almonds.
  • Roll into 6 or 12 equal-sized balls. Chill in the refrigerator for at least 30 minutes before serving. Enjoy! 

This recipe calls for just 7 ingredients. The ingredients used are 1 cup of quick oats, 1 cup of peanut butter, 1 teaspoon of pumpkin pie spice, 2 teaspoons of dried cranberries, ¼ cup of mini chocolate chips, ¼ cup of coconut flakes, and ¼ cup of crushed almonds. 

The cranberries, chocolate chips, and coconut flakes bring a good balance of sweetness to this dessert. However, if that trio is too much of a mixture for you, then you can pick which ones you’d prefer to use. Since pumpkin pie spice is so strong, you only need 1 teaspoon of it. 

To make these, in a medium-sized bowl, stir together quick oats, peanut butter, pumpkin pie spice, dried cranberries, chocolate chips, coconut flakes, and crushed almonds. Roll into 6 or 12 equal-sized balls. Chill in the refrigerator for at least 30 minutes before serving. Making this sounds easy enough, right? Well, that’s because it is! 

You can keep these Pumpkin Spice Oatmeal Peanut Butter Balls in the refrigerator for up to two weeks. However, I highly doubt they will last that long. Once you take your first bite, hopefully, you will be hooked just like it was.

You can play around with different flavors for different seasons as well. Try replacing pumpkin spice with unsweetened cocoa during the winter! Or, try adding some marshmallows for extra sweetness.
