I had some egg white bites at my aunt’s house and upon the first bite, I was in love! I think they are one of the coolest breakfast foods. Not to mention, that they are SO CUTE! So, I just knew that I had to make this recipe for you all.

This recipe makes 12 egg white bites. Typically, I eat about two of them in one sitting. They can be stored in an airtight container and placed in the refrigerator for up to three to five days. What I love about this is that I can make a batch or two and have them for almost a week! I simply pop the leftovers into a hot oven for about 7 to 8 minutes. They make a delicious main course for my breakfast or a cute little side dish. The way you serve these egg white bites is truly up to you!

Ingredients

  • 8 egg whites, beaten

  • 1/4 cup chopped spinach

  • 2 tablespoons chopped roasted red bell pepper

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 tablespoons shredded cheese (optional)

Directions

  • Preheat the oven to 350°F. Grease a muffin tin.
  • To a large bowl add egg whites, chopped spinach, roasted bell pepper, salt and black pepper. Stir.
  • Ladle the mixture into muffin tins and top with shredded cheese (optional).
  • Bake for 18 to 20 minutes.
  • Remove from the oven. Serve and enjoy!

Notes

  • These can be frozen for up to 2 months.
  • These last in the refrigerator for 3 to 5 days. 

For these egg white bites, I am using 8 egg whites, ¼ cup of chopped spinach, 2 tablespoons of roasted red bell pepper that I chopped into fine pieces, some salt, black pepper, and some shredded cheese. I just put shredded cheese on just a few of them. However, you can also put the shredded cheese inside the egg mixture. If you do, then you will get a cheesy bite throughout. I prefer to just sprinkle a little bit of cheese on top. I like it that way because it gets nicely melted and sometimes a little bit brown on top. It also peels off easily, so if I decide I don’t want to eat cheese, then I can just take it off.

I’ve seen egg white bites made in so many ways. If you want to add more protein, then incorporate some pre-cooked ground sausage. Or, some pre-cooked ground turkey or pre-cooked bacon will work too. You can decide to either put it on top or stir it into the mixture.
There are so many creative ways to make these delicious egg white bites. If you have some ingredients that you want to use up, then add those too! Some chopped green onion would be delicious! You can even put different ingredients into different ones. Maybe, you want half of them to be like how the recipe is written and half of them to have meat. Do that then! That is what I love about my recipes. They are so versatile!

I don’t have any children, but I have heard that babies and toddlers love these little egg white bites. It’s pretty nice that they can just pick one up and feed themself. It is perfectly soft for their little mouths. So, if your baby or toddler loves eggs or egg whites, then try to introduce them to these! Adjust the ingredients to their taste.
