Well, wait no longer because I used simple old-fashioned oatmeal. I added the quick oats to this recipe for some good ole fiber. Your body will appreciate that and your taste buds will not allow you to settle for just one. So go ahead, you have permission to happily indulge. I did, with absolutely no morsel of remorse.

The Chocolate Chip Cookie has quite a history. It has been around for well over 80 years. By now if you are a regular visitor of this blog, you already know that I like to do my Google Research. Ingredients

  • 1/2 cup brown sugar

  • 1 stick unsalted butter, softened

  • 1 large egg

  • 1/2 teaspoon vanilla extract

  • 1/2 cup old fashioned quick oats

  • 1/2 teaspoon baking soda

  • pinch of salt

  • 3/4 cup chocolate chips

Directions

  • Preheat the oven to 350°F. Using either a hand mixer or a stand mixer, cream together the brown sugar and butter for 2 minutes.
  • Add the egg and vanilla extract and beat together.
  • Mix in the flour, baking soda, and salt.
  • Fold in the oatmeal and stir in the chocolate chips.
  • With hands or a cookie scoop, roll the dough into balls and place two-inches apart on a baking sheet.
  • Bake for 10-12 minutes. Serve and Enjoy!

We saturate information, consume technology and can type almost as fast as the speed of lightning. Okay, maybe a stretch, but I did say ALMOST.  No eye rolling please from the previous Generations. Trust me, being a Millennial is a Blessing and a Curse. The blessing is that we do not waste time, waiting and waiting for anything. 

The curse is that we often have information overload. Which is why baking is great for all ages. It is a good way to wind down and enjoy sweet moments. It teaches you patience. Speaking of patience, I have no idea how my parents and grandparents had the patience to reference an encyclopedia. An Encyclo-what? I shudder at the thought. 

Which brings me to finding out on Google, that the Chocolate Chip Cookie was created by Ruth Graves Wakefield in 1938. She owned a restaurant called the Toll House Inn. She was experimenting with another cookie recipe, when she decided to chop up a chocolate bar and add that into her recipe. Just like that, a Sweet Gem of the Chocolate Chip Cookie was born. 

Today, there are numerous ways to make this recipe. You can add nuts, coconut, peanut butter, whatever suits your palate fancy, I say Go For It!

I decided to keep this cookie simple and just add oatmeal. It was so easy to mix the ingredients, put them on a baking sheet and place them in the oven for about 10-12 minutes. Your oven temperature may vary. And, when the edges of the cookie start to brown, then it is time to remove them from the oven and cool them on a wire rack or on your countertop. 

Here’s a little baking tip: Once removed from the oven and left on the baking sheet before transferring them to a cooling rack, your cookie will continue to bake. I personally like chewy cookies. You may like your cookies crispier. If so, and you want the crispy type, then, remove cookies from the baking sheet as soon as they come out of the oven, and transfer them to your cooling rack. 


Whatever ingredients you decide to use for your cookie, you can’t go wrong. I truly believe you will enjoy this Chocolate Chip Cookie with the oatmeal added. Lastly, I want to leave you with a sweet thought. Just think, if Ruth Graves Wakefield could create such a delicious concoction over eight decades ago, with absolutely NO Internet, but perhaps, an Encyclopedia or a Cookbook, then imagine the endless possibilities we now have, right at our fingertips, with just the Click of a Button.
