While I know some people love coconut and some have never acquired a taste for it, that is just fine. I figured, if you are curious about this recipe, I will assume you love coconut too. If so, I can assure you that you will definitely enjoy making this one.

The ingredients are simple. I used sweetened coconut flakes, lite coconut milk, coconut extract and vanilla extract. Then, once the macaroons were baked and cooled, I added the chocolate.  I used milk chocolate. If you prefer dark chocolate, feel free to use it instead of milk chocolate.

Ingredients

  • 1 cup coconut milk

  • 1 teaspoon coconut extract

  • 1 teaspoon vanilla extract

  • 1 cup sweetened flaked coconut

  • 2 milk chocolate candy bars, melted

Directions

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  • In a medium bowl, mix together the coconut flakes, coconut milk and both extracts. Using a spoon or cookie scoop, place a small to medium sized ball of the mixture onto the baking sheet.
  • Bake for 20 minutes. (You will notice that the coconut flakes will start to turn a light brown and the bottom of the macaroon will be brown too.)
  • Remove the macaroons from the oven and let them cool for 15 minutes.
  • Once cooled, lift up each macaroon and place a dollop of melted chocolate down on the parchment paper and then put the macaroon directly on top to set. Then, using a fork, drizzle each macaroon with the remaining chocolate.
  • Place tray in refrigerator for 30 minutes to set. They will be nice and chilled and ready to Enjoy!

Coconut macaroons tend to be on the sweeter side because sweetened condensed milk is usually added.I decided to take out a lot of the sweetness and use a lite coconut milk instead of condensed milk. Sweetened condensed milk is great for pies, cakes and numerous desserts, but I wanted this recipe to be delicious without being overpoweringly sweet. Besides, the coconut flakes are sweet enough. The chocolate at the bottom of the macaroon and then, drizzled on top of the macaroon, will satisfy your sweet tooth just fine. 

We all know that summer is right around the corner. For the most part, we have all been hibernating in our homes for way too long. Much longer than we expected. If you are like me, you are looking forward to a beach day or just hanging out by the pool with your family and friends, feeling good in your beach attire, because you made some healthy choices a few months back. For me the fun part was dipping the baked macaroon into the melted chocolate and then drizzling the chocolate on top.  

I have always loved Science, Art and Drama classes in school. I had no idea that all three mandatory classes would prepare me in the kitchen to fix a dish or dessert that would have a combination of all three classes. Measurements and Science go hand in hand. If the measurements are correct, that is the key to whether the recipe will be good or just a tad bit off in taste and texture. I loved Art because I immensely enjoyed using my hands and loved painting as a young child. Food is Art. It can be Beautiful or it can be a Beautiful creation that only your eyes see.  Which leads me to Drama. I believe I was born with this natural knack. And, if we are all honest, good and not so good dramatic scenes happen right in our own homes, especially in the kitchen with our family members and friends. We are either “literally” putting a fire out (hopefully, just a small fire) or “figuratively” putting out a fire. And that’s how memories are made. You may have noticed, I did not say Gym was my favorite class. I managed to take a tennis class and suit up for P.E. every day, but it wasn’t on my ‘favorites’ list. 

Today, as an adult, I welcome exercise without going overboard.  I love to eat and entertain, so I make it a point to stay in shape and healthy. Every now and then, I want a dessert, like this one, that fuels me with just the right combination of Science, Art and Drama. Why? Because, we are all making our own sweet and fiery memories to last a lifetime.
