Healthy Chicken Tortilla Soup

Soup can be eaten any time of the year and I am grateful for that. I decided to make Healthy Chicken Tortilla Soup as a recipe and I can attest that this soup is hearty and very satisfying. It is very easy to make too. The bonus? You will have enough left over for days and you can even freeze some if you wish. That’s exactly what I did! I am so glad I did because now, I do not have to make a batch for at least another couple of weeks.

The ingredients are simple too. I used chicken breasts as the protein. This recipe can be vegetarian too if you are not a meat-eater. Just leave out the chicken and toss in all of the other ingredients that will be posted below. Again, you can even improvise with the ingredients.  

If you do not like corn or beans or certain seasonings, then take them out. You are in charge of your own palate and you know what you like and don’t like. I, personally, will try anything at least once. I was never even picky as a child about food. Mostly, because I loved to eat and I had to have some protein with pretty much every meal. My parents knew I did not play when it came down to my eating. They love to tease me, that I started wanting people’s food at 10 months old. They call me an old soul. Now, I am cooking for both of them and they have gotten quite comfortable being serviced.

Ingredients

  • 3 3 beef steak tomatoes, chopped

  • 3 large 3 carrot, chopped

  • 1 1 onion, chopped

  • 1 cup 1 green beans

  • 2 cups 2 low-sodium chicken broth

  • 16 oz 16 black beans

  • 8 oz 8 corn

  • 2 tablespoons 2 taco seasoning

  • 1 tablespoon 1 dried cilantro

  • 2 large 2 boneless and skinless chicken breasts, cooked and shredded

Directions

  • In a blender, blend tomatoes, carrots, onion and green beans together.
  • Add to a large pot and heat over medium-high heat. Add chicken broth, black beans, corn, taco seasoning, cilantro, and shredded chicken. Bring to a boil.
  • Lower heat to medium-low and simmer for 25 minutes.
  • Serve with chips and enjoy!

That takes me back to this Healthy Chicken Tortilla Soup. I make batches for them and they freeze it. This soup freezes well too. It doesn’t taste watery after being frozen. You can take it out of the freezer frozen and place the frozen lump of soup right in your saucepan.
