There are a lot of benefits of mushrooms too. They offer B vitamins and are rich in potassium and antioxidants. They’re also good for maintaining healthy skin. 

Cream of Mushroom Soup

Ingredients

  • 3 tablespoons olive oil

  • 1/2 red onion, diced

  • 2 tablespoons garlic powder

  • 1 cup white mushrooms, chopped

  • 1 cup cremini mushrooms, chopped

  • 1 cup shiitake mushrooms, chopped

  • 3 tablespoons all-purpose flour

  • 4 cups vegetable stock or broth

  • 1/2 cup heavy cream

  • salt and black pepper, to taste

  • sautéed mushrooms for garnish (optional)

Directions

  • In a large pot over medium-high, heat the olive oil and sauté the diced onion for about 5-6 minutes.
  • Add garlic powder and stir for 45 seconds.
  • Add in all the chopped mushrooms, and sauté for 5 minutes.
  • Add the flour and combine so it coats the mushrooms
  • Next, add the veggie stock or broth and simmer for 20 minutes.
  • Pour in heavy cream, salt and black pepper, to taste.
  • Blend the soup. If using a blender, then allow the soup to cool before pouring into the blender. If using an immersion blender, then there is no need to cool the soup.
  • Pour into bowls. Serve and Enjoy!

Notes

  • Fresh minced garlic may be used in place of garlic powder.
Cream of Mushroom Soup

I also really enjoy mushrooms because they are so versatile. You can add them in salads, rice, on top of chicken or steak….the list is endless! I often will buy a few packs of mushrooms to use in different dishes throughout the week. They come in handy when you’re trying to think of new and creative ways to make dishes. Add mushrooms to your rice next time or make a chicken breast with a mushroom glaze. Mmmmm Can’t you just taste it now?

For this recipe I used three different types of mushrooms. I chose to use a variety because of the different flavors they add. I selected Cremini mushrooms, white mushrooms and Shitake mushrooms (which everyone tells me they love by the way). I’m glad I chose these three different types because they came together so well to create the perfect blend for this soup. 

I do want to mention that cleaning your mushrooms before cooking them is important, as mushrooms can acquire a lot of dirt. I just often take a damp paper towel and wipe them down. Or you can run water on them and dry them. Mushrooms are already packed with moisture so you don’t need to get them too wet. 

Cream of Mushroom Soup

This cream of mushroom soup is an excellent comfort dish for the entire family to enjoy. That is why I love making soups. I make enough to store in airtight containers to enjoy as a side dish or a main course throughout the week. This mushroom soup pairs very well with toasted bread and a salad on the side. Even having this soup with a simple piece of grilled chicken seasoned with some salt and pepper will do the trick. You can also serve this dish as an appetizer. 

If you want to add some other veggies to your dish feel free. I added red onion because that is what I hand on hand in my fridge. Some other nice suggestions for other veggies to add are celery, green onion, or even diced green bell pepper. 

For a perfect soup consistency, blend everything together once it is all done cooking. If you have an immersion blender, use that. Or, you can just put the soup into a regular blender. If you do use a regular blender, just make sure to wait for the soup to cool first before you blend it all together. I found this Cream of Mushroom Soup is a great dish to eat chilled, so do not be afraid to try it that way as well. 

This soup also leaves you with a great earthy taste. So if you’re looking for a healthy soup to serve with a salad for example this is a great option. I want to mention that for appearance sake I sautéed a few mushrooms and put them on top of my soup as a garnish.
