Instructions

  1. Prepare your baking tray
Preheat the oven to 350°F (175°C). Line one or two baking trays with parchment paper.
  2. Melt the chocolate and butter
Add the butter and semi sweet chocolate to a heat safe bowl. Warm slowly over a pot of simmering water or in short microwave bursts. Stir until smooth, then set aside to cool for a few minutes.
  3. Whisk the eggs and sugars
In another bowl, whisk the brown sugar, granulated sugar, eggs, and vanilla until the mixture looks thick and glossy. This step helps give the cookies their crinkle tops and chewy brownie texture.
  4. Combine the chocolate mixture
Pour the melted chocolate into the egg mixture and whisk until smooth.
  5. Add the dry ingredients
In a separate bowl, mix the flour, cocoa powder, baking powder, and salt. Add this to the chocolate batter and fold gently until combined. Stir in the chocolate chips or chunks.
  6. Scoop the cookies
Use a cookie scoop or spoon to place portions of batter onto the tray, leaving space between each one.
  7. Bake
Bake for 10 to 12 minutes until the tops crack and the edges look set. The centers should still feel soft. Let them cool on the tray for a few minutes.
  8. Finish with sea salt
Sprinkle flaky sea salt on top while the cookies are still warm, then move them to a cooling rack.

Tips for the Best Brownie Cookies

  • Do not overbake. The cookies finish setting as they cool, which keeps them fudgy.
  • If the batter feels too soft, chill it for 10 to 15 minutes before scooping.
  • Use good quality cocoa and chocolate for stronger flavor.
  • Add chocolate chunks for extra rich fudge brownie cookies.

Variations

  • Chocolate chip brownie cookies
Add extra chocolate chips or mix milk and dark chocolate together.
  • Sea salt brownie crinkle cookies
Bake slightly longer for crisp edges and strong crackle texture, then finish with more sea salt flakes.
  • Brown butter version
Brown the butter before melting it with the chocolate for a deeper caramel flavor.
