January 22nd is National Blondie Day. So, this recipe is being posted at just the right time! Of course, I had to deliver a delicious blondie recipe to commemorate this important day. This is a quick dessert to make and is a nice change from simply making regular chocolate brownies. I find them easier to whip up than brownies and less messy. They will surely satisfy any sweet tooth! If you love chocolate chip cookies and brownies, then you will just LOVE this Chocolate Chip Blondie recipe.

What Are Blondies?

Blondies are a dessert that originated in the U.S. They are sweet in taste, soft in texture, and light in color. When you think of blondies, you might immediately think of brownies. This thought is partially correct. Their ingredients are more similar than different, but there are still some minor tweaks in the makeup of this delicious dessert.

The only real difference between a blondie and a brownie are that a few of the ingredients are swapped. For instance, a brownie uses cocoa powder whereas a Blondie uses vanilla. A brownie also uses granulated WHITE sugar whereas a Blondie uses BROWN sugar and WHITE sugar. You can use any kind of brown sugar, but I find that using dark brown sugar yields the richest and smoothest flavor. This recipe is simply one of the types of blondies that you can make. Blondies also do not always have chocolate chips or anything in them at all. You can add anything to this delicious treat such as: m&ms, white chocolate chips or nuts.

Ingredients

  • 1 stick unsalted butter, melted (½ cup)

  • 1 cup dark brown sugar

  • 1/2 cup granulated sugar

  • 1 large egg, at room temperature and beaten

  • 1 teaspoon vanilla extract

  • 1 cup all purpose flour

  • ½ teaspoon salt

  • 1 cup semi sweet chocolate chips

Directions

  • Preheat the oven to 350° F (177° C) and grease a 9×9 baking pan. 
  • In a large bowl, using an electric mixer or rapidly hand whisking, mix together melted butter and both types of sugar until well combined.
  • Add in the beaten egg and vanilla extract and mix.
  • Mix in the flour and salt until well combined.
  • Fold in the chocolate chips with a spatula or spoon.
  • Spread the mixture evenly into the baking pan and bake for 17-20 minutes.
  • Allow to rest for 10 minutes before cutting and serving. Enjoy!

Notes

  • This recipe easily doubles or triples.
  • These blondies can be frozen for up to 3 months. 

If you asked me 3 years ago to try a blondie I probably would not have been too thrilled. I was a fanatic for brownies and nothing could come between me and my love for them. To give you an idea of what these Chocolate Chip Blondies taste like more specifically, I will tell you to think of a cross between the texture of a brownie and the taste of a chocolate chip cookie. This dessert is like a thick and fluffy cookie.

I love creating recipes as base recipes or what I like to call gateway recipes. This means recipes that can serve to create different dishes. For example, this Chocolate Chip Blondie recipe can easily be used as a cookie cake recipe with no adjustments needed. No one will know the difference! It can also be made in muffin liners. There are so many different and fun ways to serve this treat. If you like frosting, add it! If you like caramel drizzle, then add it! Just like brownies, the options for these Chocolate Chip Blondies are endless.

I use semi sweet chocolate chips when I make these. Semi sweet chocolate chips are great to use because the blondie batter is already sweet enough with the mixture of dark brown sugar and granulated sugar. Any other kind of chocolate chip would bring too much added sweetness.

An important thing to note is that this recipe can be doubled with ease and no adjustments are needed. You can also make these and freeze them for up to 3 months. They will taste just the same as if they were freshly baked that day. 

In all, these Chocolate Chip Blondies are a pretty versatile dessert. You can cut them in basic squares like I do, make a decorated cookie cake or bake them in muffin liners.
