I first made this recipe when I was in college. Often, I would go home on weekends to meal prep. And, yes, I made sure to take my laundry too. For meal prep, I always made salmon, scallops, and chicken as my proteins. Sides were green veggies, salad, and of course, these Zesty Sweet Potato Fries. Now, let’s start making these Zesty Sweet Potato Fries!

Alright, now let’s get into what you’ll need to make this recipe. You will need 2 large sweet potatoes that are peeled and sliced ¼ inch thick, 1 teaspoon of olive oil, 1 teaspoon of lime juice, ¼ teaspoon of each: salt, pepper, onion powder, paprika, and ¼ teaspoon of Lime zest for garnish.

Ingredients

  • 2 large sweet potatoes, peeled and sliced ¼ inch thick 

  • 1 teaspoon olive oil

  • 1 teaspoon lime juice

  • 1/4 teaspoon each: salt, pepper, onion powder, and paprika

  • 1/4 teaspoon Lime zest for garnish

Directions

  • Preheat oven to 400°F. Spray a baking sheet with oil. Set aside.
  • Place sliced sweet potatoes in a large bowl and toss with olive oil, lime juice, salt, pepper, onion powder, and paprika.
  • Lay sweet potatoes in a single layer on a baking sheet. 
  • Bake for 15 to 25 minutes or until the ends or each fry are crispy. 
  • Serve with a dipping sauce and Enjoy! 

To make these fries, first, Preheat the oven to 400°F. Spray a baking sheet with oil. Set aside. Place the sliced sweet potatoes in a large bowl and then toss them with olive oil, lime juice, salt, pepper, onion powder, and paprika. Next, lay the sliced sweet potatoes in a single layer on a baking sheet. Bake them for 15 to 25 minutes or until the ends of each fry are crispy. The cooking time all depends on how well your oven cooks. And, at last, Serve your Zesty Sweet Potato Fries with your very favorite dipping sauce and enjoy them to the fullest!
