Easy Chicken Salad

Less stress and less mess is what this Chicken Salad recipe brings. This recipe is easy which is exactly what is needed going into the new year. Chicken Salad makes for one of the best lunches, a quick snack before heading out the door or even a lazy night dinner. It can be served either alone, on a roll as a sandwich, or plated with crackers and veggies. There truly are endless options. Whichever way you choose, this hearty chicken salad will satisfy your belly.

I’ve found the most delicious chicken salad calls for a mayonnaise base, celery seed, chopped celery, black pepper, a just a slight pinch of granulated sugar. Also, depending on your brand of mayonnaise, a small pinch of salt might be needed. I usually forgo the salt since the mayonnaise I use is salty enough for my tastebuds.

Now, there is one essential step in creating this chicken salad and making sure it is well seasoned. This step is, to add the mayonnaise to a bowl along with all the other ingredients (except for the chicken) and mix well. Then, add the shredded chicken to the mayonnaise mixture and stir to coat the chicken. This will ensure that each bit of chicken gets coated with an even amount of seasoning and other ingredients.

Now, for this recipe, I steam my chicken breasts, and then shred it while it’s still hot. You can either steam, bake or grill your chicken. This Chicken Salad is extremely filling. All the ingredients work together to enhance the taste of the salad. I have been making this recipe for a while now and I find that the amount that I use of each ingredient always works for those I have served this to. I love the added crunch of the chopped celery, the twinge of sweetness from the granulated sugar and the savory finish from the mayonnaise and celery seed base.

Ingredients

  • 2 large chicken breasts; cooked, shredded, and chilled

  • 1/2 cup celery, chopped

  • 1/2 cup mayonnaise, chilled

  • 1 1/2 tablespoons celery seed

  • 1/2 teaspoon granulated sugar

  • salt and pepper to taste

Directions

  • In a large bowl, mix mayonnaise, celery, celery seed, sugar, salt (if needed) and pepper.
  • To that, add shredded chicken and combine until chicken is evenly coated.
  • Enjoy with crackers, on a sandwich, or by itself!

Notes

  • Make sure your chicken is fully cooked before shredding.

When serving, on a plate with crackers, I like to add a little bit of chopped red bell pepper on top to liven up the color and add some more crunch. This also gives each bite a robust flavor. I do not like to mix the red bell pepper into the chicken salad though, because not everybody in my household will eat it that way. If you love a certain ingredient, but those in your household do not, you can easily add whatever you would like to your own individual portions.   1. This is all right if you like mushed up chicken, celery, and mayo, which is about all it is. I never have celery around the house, but i do have celery seed and like to use it in a chicken salad. Let’s chop the chicken into small bites, add some finely chopped sweet onion, and put some orange zest and a tablespoon of orange juice in the mayo. Just that little lift in the mixture can make a world of difference.
