  • 2 slices thick white bread

  • 1/4 cup melted vanilla ice cream

  • 1 large egg

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1 teaspoon vanilla extract (optional)

  • Maple syrup and berries for serving

Directions

  • In a bowl, whisk together the melted ice cream, egg, cinnamon, nutmeg and vanilla extract.
  • Soak each piece of bread in the mixture.
  • Spray a non-stick pan or griddle with cooking spray or butter and heat on medium.
  • Cook French toast for 2-3 minutes per side until golden brown.
  • Serve with maple syrup, a scoop of ice cream and Enjoy!

  • Any flavor of ice cream can be used.

Ever since I made this Ice Cream French Toast a few weeks ago, it has now become one of my favorite desserts. It is so easy to make and it is also a relatively reasonably priced dessert. Bread and ice cream do not cost too much. As for the other ingredients, I pretty much always have them on hand. This ice cream french toast is made with thick slices of bread, melted vanilla ice cream, an egg, cinnamon, nutmeg and pure vanilla extract. 

You might be wondering if you can use different flavors of ice cream. Cooking should be fun. So, the answer to your question is YES! I prefer to use vanilla ice cream because it is easier to please people’s palates with that flavor. It is also the closest color to milk which is what I would use in place of ice cream if I were just making regular french toast. However, I do think a creamy, melted strawberry ice cream would go pretty well with the thick slices of bread and warm maple syrup. You can even soak the bread in one flavor ice cream and top off the finished french toast with a scoop of another flavor.  

After soaking each slice of bread in the mixture place them into a baking oil sprayed skillet over medium heat. Cook them for about 2-3 minutes per side. Be sure to keep your eye on them. You want the bread to get a nice golden color to it. However, do not be alarmed if some spots get a little darker than golden. Sometimes those browner spots on french toast can be the best part. In this case, they can always be covered with some extra scoops of ice cream. That seems like a fair trade off, right? 

This recipe serves one. And, trust me when I tell you that after having just one bite of this Ice Cream French Toast, you will wish you had made more. So, double or triple the recipe to serve your needs. It is better to have more than you think you will need with this one. You can also make this ahead of time.It will last for up to 5 to 7 days in the refrigerator. If it is frozen, it can last for up to 2 months. So, make this in batches if you wish. I most likely will be doing that very soon. Although this is quick to make, it is always nice to not have to pull out ingredients to make a dessert. So, having some of this ice cream french toast at the ready in my fridge or freezer will make my dessert plans a lot easier. Serve this with a scoop of ice cream, warm maple syrup and berries if you wish. Enjoy!
