Peanut Butter and Oatmeal Protein Balls

Yummy and Healthy make for a Perfect combination. This delicious treat is packed with some powerful ingredients. I usually keep this goodie on hand, in my refrigerator, just in case I am craving a snack that immediately satisfies my sweet tooth, while giving me some much needed fiber and protein. Peanut butter is packed with protein and the oatmeal is a good source of fiber. I added chia seeds because they pack a powerful punch. In fact, they are a quadruple threat. Chia seeds are loaded with fiber, protein, antioxidants and Omega-3 Fatty Acids.

You can keep these Peanut Butter treats in the refrigerator for up to two weeks. But, trust me, when I tell you that, even if you make a dozen of these; they will not last that long. Why?  Because, not only will you love them; but, so will your family members and friends, once they discover, this gem of a snack. 

This recipe calls for six ingredients. I used peanut butter, oatmeal, mini chocolate chips, chia seeds, shredded coconut and walnuts. Feel free to add or subtract ingredients as you wish, as long as you include the two main staples: oatmeal and peanut butter.

I will often include cranberries in lieu of chocolate chips for sweetness, but, not for this recipe. I like experimenting with different ingredients with this fulfilling treat. You can even substitute slivered almonds instead of walnuts. Your palate, your choice. Not everyone likes coconut. I do, so I added in shredded coconut.

Ingredients

  • 1 cup 1 peanut butter

  • 1 cup 1 quick oats (oatmeal)

  • 1/4 cup 1/4 chia seeds

  • 1/4 cup 1/4 coconut flakes

  • 1/4 cup 1/4 walnuts

Directions

  • In a large bowl, mix together peanut butter, quick oats, chia seeds, coconut flakes and walnuts. (I use my hands to mix since it is easier than using a spoon.)
  • Once combined, use your hands or a medium cookie scoop to form the mixture into balls.
  • Allow to chill in the refrigerator for 30 minutes before enjoying.
  • Store in a covered container in the refrigerator for up to 2 weeks.

Notes

  • To mix, it is best to use your hands or a stand mixer on low speed.

Again, this recipe is a very good one to use because it is a very simple one to make. I like it, because I always have peanut butter and oatmeal in my pantry. Then, I create my concoction with whatever I can find in my cabinet without having to make an extra run to the grocery store.This recipe is easy and quick to make. It can be a little messy. If you don’t wear plastic gloves. Your hands will be a little gooey from the peanut butter. I tend to like messy, because I used to love doing science experiments in grade school and I always looked forward to getting my hands sticky.

This recipe, once rolled around in the oatmeal, will no longer be sticky when the finished product is placed in a container.  You can always wash and dry your hands after rolling a few of these  balls. There may be an easier way to keep your hands mess free but, I have yet to discover that little trick. Perhaps you will; and, if you do, please share with the rest of us. 

I made a half dozen of these Peanut Butter and Oatmeal balls; and, after rolling them, placed them on a pretty plate for optics purposes. I then transferred them into a covered container and placed the peanut butter balls in the refrigerator. I have already consumed two of these mouth watering treats as of this writing. I cannot promise you they will last a week because they are that delectable.

However you choose to make yours, be experimental and enjoy every single bite.
