Applesauce Muffins are one of my favorite type of muffins to bake. For one, they smell delicious throughout the prepping and baking process. When you bite into one of these Applesauce Muffins, you will notice just how moist they are and bouncy to the touch.

No sour cream is needed for this recipe. You may already know that sour cream helps to make baked goods moist. However, no sour cream is needed for this recipe. The applesauce used in this recipe keeps these muffins extremely moist!  If any sour cream were to be added, it might just make the muffins turn to mush. In other words, you would just be eating applesauce!

Ingredients

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 tablespoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1/2 cup butter, melted

  • 1 teaspoon pure vanilla extract

  • 1 cup unsweetened applesauce

Directions

  • Preheat the oven to 350°F/177°C. Line a muffin pan with liners and spray with baking spray. Set aside.
  • In a medium bowl, mix the flour, baking soda, salt, cinnamon, nutmeg, brown sugar and granulated sugar.
  • In a large bowl, mix the eggs, melted butter, vanilla extract and applesauce.
  • Add the flour mixture to the applesauce mixture. Stir until just combined.
  • Pour muffin batter into liners.
  • Bake for 18 to 20 minutes, or until a toothpick comes out clean.
  • Allow to cool for 5 minutes in the pan before removing and serving.
  • Serve and Enjoy!

Notes

  • These muffins can be frozen for up to 3 months.

This Applesauce Muffin recipe makes enough to serve 12 people. Well, that is, if you make regular-sized muffins as I did. However, feel free to make mini ones or jumbo ones. The serving sizes will drastically change, however. You be the judge of how you want to serve these. After all, you’re the baker here! These muffins make for a wonderful breakfast, snack, or dessert. You choose when you eat them! If I could, I would eat them all day. 

The ingredients that you will need to make these Applesauce Muffins are 1 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, 1 tablespoon of ground cinnamon, ½ teaspoon of ground nutmeg, ½ cup of brown sugar, ½ cup of granulated sugar, 2 large eggs, ½ cup of melted butter, 1 teaspoon of pure vanilla extract, and 1 cup of unsweetened applesauce. You can use smooth or chunky applesauce. In this recipe, I used smooth. 

To bake these, first, preheat your oven to 350°F/177°C. Next, line a muffin pan with liners and spray them with baking spray. Set that aside. Then, in a medium bowl, mix the flour, baking soda, salt, cinnamon, nutmeg, brown sugar, and granulated sugar. In a large bowl, mix the eggs, melted butter, vanilla extract, and applesauce. Add the flour mixture to the applesauce mixture. Stir the mixture until everything is just combined. Be sure to not overmix so that the batter doesn’t tighten up. Pour the muffin batter into the liners. Bake them for 18 to 20 minutes, or until a toothpick comes out clean when it’s inserted into the center of the muffin. Allow these Applesauce Muffins to cool for 5 minutes in the pan before serving them. Finally, Enjoy them! It’s pretty hard to not!
