Don’t worry, it’s not overly sweet. This recipe makes enough to serve one so if you have a sweet tooth and you need to satisfy you’re craving, go ahead and whip up this yummy recipe. Prep for this is about five minutes or less. So, you will be eating this recipe in no time at all. And, you only need a few ingredients. 

The great thing about this dessert/snack is that it is rather healthy compared to others. It calls for Key Lime flavored Greek yogurt. Greek yogurt tends to have quite a bit of protein. So, you can have this as breakfast to start your morning or, you can enjoy it as a midday snack or dessert.

Ingredients

  • ⅓ cup crushed coconut cookies

  • 1 tablespoon melted unsalted butter

  • 5.03 oz key lime flavored Greek yogurt

  • 1 Lime slice

  • Optional: whipped cream for topping

Directions

  • In a saucepan over medium heat, melt butter. Stir in crushed cookies.
  • Next, to a parfait glass, layer in crushed cookies, and yogurt until all ingredients are used. NOTE: you should have 4 layers total.
  • Finally, garnish with a slice of lime. Top with whipped cream if desired.
  • Serve and Enjoy!

I chose to use crushed coconut cookies for this recipe because I liked how it balanced out the flavor of the parfait as a whole. The key lime yogurt is both sweet and tart. So, the coconut cookies help to round out the dish. They also add a wonderful element of crunch! To hold the cookie crumbs together, you will need some butter. Just a little bit of melted butter will do the trick. Melting the butter is the only cooking part of the recipe. Mix the melted butter into the cookie crumbs. Then, you can begin to assemble your parfait.  

Layering the parfait in four layers yields a pretty outcome. And, you can get a little bit of everything on your spoon when you dig in. Hopefully, you enjoy making this quick recipe. Keep this recipe in mind when you have a sweet craving but don’t want to spend a lot of time in the kitchen. Happy Scooping!
