Valentine’s Day Pancakes

Breakfast in bed anyone? Yes! Definitely! I have the perfect recipe for you to please your significant other or even yourself. I won’t keep you guessing much longer. Why not make Valentine’s Pancakes? And, use the pancake heart mold to send the perfect message of love. If you do not have a mode, you can get them from anywhere, but Amazon might be your best bet. 

You will be surprised how much effort that you put into this small gesture of love will reap benefits on both ends. I have always loved Breakfast in Bed. I have no problem catering to myself. I want you to do the same.

Ingredients

  • 2 cups 2 all-purpose flour

  • 2 ½ tablespoons 2 ½ granulated sugar

  • 1/2 teaspoon 1/2 salt

  • 1/2 teaspoon 1/2 baking powder

  • 1/2 teaspoon 1/2 baking soda

  • 2 ½ cups 2 ½ buttermilk

  • 2 large 2 eggs, beaten

  • 8 tablespoons 8 unsalted butter, melted

  • maple syrup and whipped cream for serving

  • Spray or butter for pan

  • Heart-shaped pancake molds (silicone or nonstick)

Directions

  • In a large bowl, whisk together flour, sugar, salt, baking powder and baking soda.
  • Then, in a separate bowl, whisk together the buttermilk, eggs, and melted butter.
  • Combine the buttermilk mixture with the dry ingredients and fold with a spatula until just combined. Batter should be slightly lumpy.
  • Next, spray or butter a nonstick skillet. Turn heat to medium low. 
  • Spray pancake molds and place in skillet.  Pour pancake batter into the molds. Cook for 2-3 minutes. Then, pop out of molds and cook for 2 minutes on the other side. 
  • Repeat until all the batter is used. Serve and Enjoy with maple syrup and extra butter!

I love Breakfast for dinner too. Why limit yourself or your palate to a certain time to eat a certain food. Who doesn’t have pancake mix or all of the ingredients to make pancakes right? Just make certain you don’t forget the syrup. However, the grocery stores offer plenty of options.

I believe we all tend to stick to what we grew up having as a kid, until we want to implement something a little healthier.  In my house, it was Aunt Jemima Original syrup. As an adult today, I like to use a good grade of organic maple syrup.

The Valentine’s Pancake recipe that I made was simple.  It takes no time at all to pull out a bowl, gather your ingredients and get a whisk and whisk away. I am old fashioned that way. I like how both my grandmothers kept it simple. They didn’t need all of the fancy schmancy gadgets that we use today.  

Don’t get me wrong. I love certain fancy schmancy gadgets too, but I also love going back to my roots. That was the legacy they left me, and I am so appreciative for their love and of course, cultivating my love of food.
