This is an easy and fun dessert to make.  Making this only requires a few ingredients. What you’ll need for this recipe are 2 cups of vanilla Greek yogurt, 2 cups of pumpkin purée (not pumpkin pie filling), 1 teaspoon of pumpkin pie spice, and ¼ cup of powdered sugar.

Ingredients

  • 2 cups vanilla Greek yogurt

  • 2 cups pumpkin puree

  • 1 tablespoon pumpkin pie spice

  • 1/4 cup powdered sugar

Directions

  • In a small bowl, mix together pumpkin puree, pumpkin pie spice, and powdered sugar.
  • Next, in a mason jar or parfait glass, layer equal portions of the pumpkin mixture and vanilla Greek yogurt.  The final layer should be vanilla Greek yogurt. 
  • Sprinkle with more pumpkin pie spice. Serve and Enjoy!

Notes

  • Imperfect layers make for a rustic and unique presentation.
  • For even layers, use a piping bag.
  • Add more powdered sugar as needed and taste as you go. 
  • Maple syrup may be substituted for powdered sugar, however, the flavor will differ from powdered sugar.

Let’s get started on making this in Pumpkin Parfait, shall we? First, begin by mixing the pumpkin puree, pumpkin pie spice, and powdered sugar in a small bowl. Next, put down a layer of the pumpkin mixture in the mason jar. Then, follow that with a layer of vanilla Greek yogurt and repeat. I typically aim for four layers total. Be sure to make the top layer the Greek yogurt. Then, sprinkle with pumpkin pie spice. Serve and Enjoy! That’s as easy as it gets! 

You can eat these immediately or save them for later. If you would like to save them for later, simply cover them with a lid or cling wrap and keep them in the refrigerator for up to three days.

If you’d like an idea of what these taste like before whipping them up, then read on. The powdered sugar added to the pumpkin puree gives just the perfect hint of sweetness. The recipe measurement for the powdered sugar is perfect for my palate. Do whatever works for your palate! If you need more powdered sugar for it to be sweeter, then add more! Nothing needs to be added to the vanilla Greek yogurt. The vanilla Greek yogurt already has a sweetness of its own. 

Although the textures of the pumpkin and yogurt are similar, they are also different. The pumpkin puree is slightly more “grainy” in texture and is thicker. That is why it is used as the first layer. It acts as a base layer for the lighter textured Greek yogurt to stand. Using Greek yogurt as the first layer just might weigh down the parfait. And, although we are not looking for a perfect presentation here, we do still want a pretty presentation. So, the layering method as instructed is the best way to go.
