Ingredients

  • 1 ½ cups milk

  • ¾ cup pumpkin puree

  • 1 large egg, beaten

  • 3 tablespoons melted butter

  • 2 tablespoons lemon juice

  • 2 cups all-purpose flour

  • 2 tablespoons brown sugar

  • 1 ½ tablespoons baking powder

  • ½ teaspoon baking soda

  • 3 teaspoons pumpkin pie spice (or an equal blend of cinnamon, allspice, and ginger)

  • 1/2 teaspoon salt

  • maple syrup for serving

Directions

  • In a large bowl, mix the milk, pumpkin puree, egg, melted butter, and lemon juice. 
  • In a separate bowl, combine the flour, brown sugar, baking soda, baking powder, pumpkin pie spice and salt.
  • Pour flour mixture into pumpkin mixture and stir until just combined. Be sure to not over mix the batter. 
  • Grease a non-stick skillet over medium-high and pour about ¼ cup pancake batter in the center. Cook for 3-4 minutes per side. Continue until all batter is used.
  • Serve with maple syrup, extra butter and Enjoy!

These pumpkin pancakes are rather easy to make. What makes them so easy is that the recipe is built using your regular pancake recipe. Just a few additions are needed to create a pumpkin flavor and an orange hue. The pumpkin spice gives these pancakes their fall flavor and aroma while the pumpkin purée tints them orange.

To get started on making this, prepare the ingredients. They are 1 ½ cups milk, ¾ cup pumpkin puree, 1 large beaten egg, 3 tablespoons melted butter, 2 tablespoons lemon juice, 2 cups all-purpose flour, 2 tablespoons brown sugar, 1 ½ teaspoons baking powder, ½  teaspoon baking soda, 3 teaspoons pumpkin pie spice (or an equal blend of cinnamon, allspice, and ginger), ½ teaspoon salt, and some ​​maple syrup and butter for serving. 

These pumpkin pancakes are so good, you’ll wish you made more! Oh! And, if you want to go the extra mile, put a dash of pumpkin spice in the warm maple syrup! That way, you have pumpkin-flavored maple syrup soaking into your stack of pumpkin pancakes! Doesn’t that just sound so delicious? 

Then, in a large bowl, mix the milk, pumpkin puree, egg, melted butter, and lemon juice. Next, in a separate bowl, combine the flour, brown sugar, baking soda, baking powder, pumpkin pie spice, and salt. Pour flour mixture into pumpkin mixture and stir until just combined. Serve the Pumpkin Pancakes with maple syrup, extra butter, and enjoy every bite! That’s it! This recipe can also be used to make waffles.
