One of the best ways to make potatoes is to roast them. These Oven Roasted Potatoes are full of flavor and are easy to make. They make for a pretty impressive side dish if garnished correctly. The prep and for these oven roasted potatoes requires minimal clean-up.

Ingredients

  • 2 pounds red or baby potatoes

  • 2 tablespoons grapeseed oil or olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon smoked paprika

  • salt and black pepper, to taste

Directions

  • Preheat the oven to 425°F.
  • Wash and scrub potatoes well. Pat them dry.
  • Slice the potatoes into bite-sized pieces. Place them on a baking sheet and season with oil, garlic powder, onion powder, Italian seasoning, smoked paprika, salt and black pepper, to taste. Toss to coat evenly. 
  • Bake for 35 to 40 minutes until browned. 
  • Remove from the oven and allow to rest for about 5 minutes before serving. Enjoy!

Notes

  • Any type of potato works with this recipe.
  • To ensure even cooking time, be sure to cut all pieces the same size.

To get started on making these, wash the potatoes and cut them into bite-sized pieces. Pat them dry well. Spread them out on a sheet pan. Then, drizzle on oil (grapeseed oil is my go-to!), followed by a blend of garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and black pepper. Using your hands, toss them around so that each piece gets evenly coated. 

Next, bake them at 425° F for 35 to 40 minutes, or until they’re browned and slightly crispy on the outside. There is no need to toss the potatoes as they roast. They cook through evenly on their own. After baking them, remove them from the oven. Then, allow them to rest for a few minutes before serving. Serve them with your favorite food or just eat them alone as a snack with some ketchup. These potatoes pair wonderfully with steak, chicken, or salmon. I love to serve them with green beans, as well. To make these potatoes stand out and look pretty, you can top them with some fresh parsley or other herbs of your choice.
