Ingredients

  • For the Rice:
  • 1 cup cooked rice

  • For the Salmon:
  • 1/2 lb salmon, cut into bite-sized chunks

  • 1/3 cup chopped green onion

  • For the Vegetables:
  • 1 tablespoons olive oil

  • 1 medium zucchini, cut into bite-sized pieces

  • 1 cup frozen corn

  • salt and black pepper, to taste

  • For the Marinade:
  • 1/4 cup low-sodium soy sauce

  • 1 teaspoon brown sugar

  • 1 teaspoon honey

  • 1 teaspoon fresh lemon juice

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon chili powder

  • black pepper, to taste

Directions

  • For the Teriyaki Salmon:
  • In a small bowl, mix together the soy sauce, brown sugar, honey, lemon juice, garlic powder, chili powder, and black pepper. 
  • Place salmon chunks in the bowl and coat with the teriyaki sauce.
  • Place in a baking dish and pour the remaining teriyaki sauce over the salmon. Add about 1 teaspon of green onion to the salmon.
  • Broil on high for 8 minutes.
  • For the Vegetables:
  • In a large skillet over medium-high, heat olive oil and saute zucchini and corn for 6 to 7 minutes.
  • Season with salt and pepper, to taste.
  • For Serving:
  • Place the cooked rice in a bowl, add cooked zucchini, corn and salmon. Garnish with remaining uncooked green onion. Serve and enjoy!

Notes

  • Be sure to broil the salmon on the highest rack closest to the broiler.

This Salmon Teriyaki Bowl consists of brown rice, teriyaki marinated salmon that is cut into bite sized chunks, and seasoned and sautéed zucchini and corn. Everything in this dish works together so well. It all truly is a winning combination. 

The measurements given for this recipe can happily serve 2 people. If you are just making this for just yourself, that is great because you will have leftovers for your next meal. How lovely does that sound? The leftovers taste pretty much the same the next day, but the flavors are just amplified since they get the time to blend into each other even more overnight. What can be better than that? Not much more.

The salmon teriyaki marinade consists of low-sodium soy sauce for salt, garlic powder for a pungent flavor, brown sugar and honey for some sweetness, some fresh lemon juice for a little bit of acid and some chili powder and black pepper for a slight kick. Simply toss the salmon chunks around in the marinade to coat each piece. I advise you to only marinate the salmon for about 5-10 minutes as if it seeps into the fish too much, the fish will become too salty. All you want is a nice coating of teriyaki sauce.

From there, place your salmon chunks into an ovenproof dish and pour the leftover marinade over them. Add a teaspoon of green onion if you would like to. I reserve the rest of the green onion so that I can garnish the whole bowl at the end. This fish only needs to be broiled on high for 8 minutes total. I place it on the highest rack, closest to the broiler. 

While the teriyaki salmon broils, I saute the zucchini and corn together in a large skillet over medium-high heat. This takes about 6 or 7 minutes. So, it is timed perfectly so that everything can be hot when placed in the bowl. Do not worry if your rice is not hot, but is room temperature. The salmon, zucchini, and corn will happily warm up the rice. 

Once everything is finished cooking, go ahead and bowl it up in any pretty way you like and garnish it with the rest of the green onion. The contrast of the broiled green onion and the raw green onion is a delicious and strong combination that really helps the dish to stand out even more.
